I think they used the CGI coz if they find a normal baby to act in this there won't be any acting at all. The baby was supposed to look like she 'knew' her surroundings, like when she saw Charlie there was some reaction there. The human-vampire baby also grow faster than an average one, so Renesmee should not be like a normal baby...? It looked creepy and weird but there's a purpose.

If I may nitpick, the fact that Charlie was never able to figure out that there were supernatural beings roaming about his town and that Bella (his daughter) was in cohoots with them - it was some disbelief that I had trouble suspending every now and then.
