Ingredients:
3 apricots, halved
6 cups spring greens 2 cups arugula
2 burrata balls
6-8 basil leaves
1⁄4 cup raw honey Olive oil for drizzling Sea salt and pepper
Instructions:
1. Start your barrel by preheating to medium/low heat or low track on your barrel.
2. Cut apricots in half removing the seed and place flesh down on the grill. Grill for 3-4 minutes until grill marks appear and they are slightly softened.
3. On a large platter arrange a bed of greens.
4. Tear open the burrata and place it on top of greens.
5. Remove apricot from the grill and arrange them around the platter.
6. Drizzle everything with honey and olive oil.
7. Toss basil leaves over the top and season with flaky sea salt and cracked black pepper.
