I worked as a cook for 31 years, I made hollandaise sauce all the time, I used 18 egg yolks 3lbs of butter and 6 shots of Tabasco. Just melt the butter and add slowly to egg yolks mixing constantly.

To those new to carnivore- Carnivore diet cured so much for me! I update this list as time passes so it is always up to date, newest items at bottom of list. I have been zero carb carnivore for 11 months. * No more perimenopause- completely reversed! *Period cycles all timed perfect with 4 week intervals.And no PMS symptoms, but only the actual menstrual cycle itself! *No more night sweats *No more waking every 2 hours at night! *It used to take me 20 minutes or longer to fall asleep at night when I would first go to bed at night- before carnivore. Now it takes like a minute or less. Haven’t noticed since I am out fast! *No more life long eczema *No more cold hands *No more cold body temp in general! Used to feel like a reptile - only warm in texas sun. *No more IBS symptoms (gas, bloating, stomach pain, constipation, diarrhea) *No more feeling low energy by 12pm and zombie by 4pm *No more purple looking hands in winter *No more brain fog *No more arthritis that I felt in hands, knees, and hips- or elbows *used to have sore hips when sleeping on my side. No more! *Lost 45+ pounds from former baby weight and peri menopause weight. *Always had 20/20 vision with slight stigmatism- but in March doctor said my stigmatism is reversing! *Don’t sunburn as easily anymore and tan well. *Wrinkles around eyes seem to be much less. I am 46 and look like I am in early 30’s. *Gums look super healthy. Dentist seems irritated as my teeth are not dirty when cleaning every six months. Think they know they won’t make money off me. *No more sore chest from monthly periods- no swelling feeling of fullness or discomfort that prevented me from sleeping on my stomach. Now I sleep every night on my stomach! *Fibrocystic Breast issues reversing! Almost all gone after 6 years of buildup! *no cravings unless they are for meat *no more angina symptoms before a period- which started about 3 years ago. *No more feeling weak like almost passing out and dizzy around ovulation and periods * no more fingers swelling- that started a few years ago- rings kept being tight- is pattern I noticed. One ring I had resized larger and it’s super loose now. Will have to resize smaller. *feel stronger- now lifting barbells not just hands weights. Dr. Baker said since I am 46, and 5’7” at 122lbs- need more resistance training to add more muscle weight. . So bought a 47lb barbell off Amazon and have 40 extra pounds added to it. Will continue to progress with that. *Before carnivore- i had started growing grey hairs in one of my eyebrows, few hairs at a time, but no grey in my blonde hair yet - but assumed it was coming. Now on carnivore I have had no new grey hairs growing in eye brows and still no grey hair in my natural blonde hair. And in the sun it gets super light highlights. * no more body odor! * I used to get a little anxiety with large crowds- like if attending special events- but since on carnivore I don’t get it that much. *I was a bit OCD before carnivore, but so much more relaxed so barely like that. * I was a relaxed person before, but somehow am even more relaxed and never stress about things. *Since I was a young child my sense of smell has been terrible. But not even a month in on carnivore my sense of smell has gone crazy! I smell things even far away! Amazing! *no more allergies! I was allergic to cedar and oak pollens- and mold- but since carnivore I am no longer reacting to those outdoor pollens which is amazing! * I have had no more issues from ear wax build up. Had it twice after having kids and docs would say it was a hormonal problem. Carnivore cured that too! *Veins in my arms look healthier. They were almost invisible before. *Legs no longer hurt on longer road trips or plane rides! *I used to get a popping sounds in my right shoulder when lifting weights. Was probably a pulled ligament. That is now gone! *I have been lactose intolerant since I was a kid, and I feel my nails are a bit stronger than before. They do break if I catch them on things but I feel they are getting stronger on carnivore. *My teeth look more white on carnivore. *My blood pressure has improved on carnivore. 6 years before carnivore up to starting carnivore my blood pressure was increasing. Now on carnivore it is back to normal like when I was younger. Last reading it was 100/75 which is awesome! *i used to get eye twitches in my eye lids, but that is gone. * at times when trying to fall asleep I would close my eyes and at times felt dizzy like falling feeling or spinning. But haven’t has that since I have been on carnivore for 11 months. *the skin on the heals of my feet are no longer cracked and dry! (Newest update added!) If I think of anything else will add. ☺️👍🏻 I know when people go on carnivore they are trying to heal something, but if they aren’t like me and notice small things- they may not notice they are healing way more than they realized- things plant foods were causing! And they need to remember, processed foods are made from plants- but so are whole foods (raw or cooked!) they are all toxic! The carnivore diet cures! ☺️👌🏻 The body is a network made of multiple gears- and if one gets messed up it causes a whole domino affect of problems like I had! The carnivore lifestyle is not a fad, it’s the ancestral human way of eating! Go Carnivore for a few months and see how you feel! ☺️👍🏻

For future reference, there is a word for that dizzy-unbalanced-falling feeling you get when you go to bed. Vertigo. Remember that "fish is brain-food" because of the healthy fats. Carnivore diet is feeding (and healing) the brain.
@JennifertxCarnivore
@JennifertxCarnivore Жыл бұрын
@@OhPervyOne i was never diagnosed with “vertigo” but have heard of it. I thought it was mainly feeling dizzy when getting up. I would be trying to fall asleep laying still and then suddenly feel like I was falling through the mattress in a way, just a bit, or spinning at times- but slowly- when I closed my eyes laying completely still. I wasn’t getting up at all. Not sure if that is still considered vertigo. Ever since I have been carnivore these past 11 months I haven’t had that feeling when laying down, which is nice!

Actually, @@JennifertxCarnivore I agree about the mercury (and now micro-plastics) so I avoid seafood. My weakness is crab and lobster, though. Humph. Anyway, my point was about your brain needing the fats to heal. That's what the Carnivore diet is doing for you. High fat is good for you. Good thing it's so tasty. LOL

I got pork belly from Costco credit in chunks cooked it on all sides constantly flipping it over and until brown. Prior to that I rendered beef fat. Put it in a crock pot and just let it cook slowly for several hours. Point being you don't need to add water.

I hope you saved all the lard you rendered from the pork fat, for frying eggs and hamburger 'n all that good stuff. I hadn't thought of frozen butter chips... but I immediately got ideas. Quick prep methods and... Silicone. First, do you have a muffin tin? Either a silicone mini-muffin tray or liners. I'm thinking what I would do is divide that stick of butter equally(ish) to each cavity of the muffin tin, add some salt, then pop it in the oven for a minute or two - just long enough to melt the butter so it spreads out flat - then out of the oven and after it cools down, pop into the freezer to solidify to make 'chips' that are all perfect little round chips. Or use a brownie tray or a silicone candy mold to make little butter-bits. I like silicone cuz it should be easy to pop the portions out once frozen. And I like making perfect-shaped snacks. LOL I've been thinking about baking cookies in a muffin pan, to get that perfectly even, thick, soft cookie... AND NOW I'm thinking about using the muffin pan for making fat bombs and burger-bites. (I'm getting a silicone egg-bites mold for this very reason.) Oh, hey now. Just popped a new idea What about using your egg-bites molds? Cut a cube of butter in half, then divide each in 6 or 7 egg-bites, melt it quickly in the IP (or air-fryer), then pop into the freezer to make perfect little salted-butter buttons. That would be cute, I think. I just remembered something else. Have you checked out "Carnivore mayo" recipes? All that rendered lard would be *perfect* for home-made carnivore mayo. I just subbed. Will check out other videos.

The bits left after rendering pork lard are known as cracklings, we raise all our own beef, pork and poultry - when I render fat I do either in the oven in a big cast iron dutch oven or on the stove top if I want just enough for a meal. I've tried the crockpot method but I find it a hassle because you can't do a lot at once and I've just never liked to crockpot. I try to get it all rendered in the fall after butcher, but I've never actually done that in over 30 years of homesteading! Some day lol

1 egg yolk can bind up a litre of fat, for a hollandaise you really need only one yolk and 2 sticks of butter. It helps to pre-slice the butter into small-ish chunks. I always add vinegar, it helps to get over the loss of ketchup 😉

You can render your lard/make pork snacks in a crockpot next time. It's been years since I last did it, but i remember just leaving the lid askew and stirring every few hours. Remove the pieces that are done & stir, a couple of times until it's done. I also like to flavor mine with chili lime salt. Yum! It's a change for sure. Food becomes much more enjoyable in terms of satiation and energy, but less so in the way we used to think about food. If you're used to a very hyperpalatable experience with your meals, this will be quite different. I'm 9 months in right now and experienced some of what you're describing early on. They are Carote brand. I've found they've browned significantly over time, and it's not very pretty 🤣. So I don't really recommend them unfortunately...

Eating fat from industrially raised grain/soy animals is not a good idea, too many Omega 6s, better just to eat grass fed protein and the fat that accompanies it for better Omega 3:6 ratios.
