I have also never undercooked the rice but it happens when you don't add enough water during the cooking process. Also, not that hard to avoid. For the guac, it's just red onion, jalapeno, salt, cilantro and lemon/lime juice

That’s definitely a tenderloin cut but a mislabeled one. Fillet mignon is a center cut of the tenderloin and deserves a higher price.
