I need to do this so bad haha. I have like beans and random flours and ingredients in my pantry that I've had since I moved into my old place, which was like 2 years ago LMAO XD Also FYI instant vs rolled oats: rolled oats are just literally..flattened oats, whereas the instant oats have been processed a bit so they're smaller bits of the rolled oats and cook faster :)

I liked esp what you did with the rice noodles. it really looks like one of those easy peasy things I would try at home but maybe with less ideas what else to add so it is not overloaded. so maybe I would haven't add dumplings thinking it would be too much. maybe I would have tried to add tofu. as I don't like it fried and in that dense dish even the fermer tofu would break and spread around like minzed meat (what I don't like?) so usually I wouldn't have add anything in addition to the veggies. and knowing me, maybe only half of the vegetables (incl legumes) :-). but it looks like it is ok because the rice noodles are rather neutral anyway. I will try that next time. on the side you also had some frozen veggies, like brokkoli and soybeans. I may have not paid attention before but do you eat them plane? no oil no salt or pepper? or do you just add a bit of soy sauce or coconut aminos?
