We make this in Guyana and i loved it growing up. We usually make them and add food colouring to give each sandwich a different colour. So beautiful. They were served at children's birthday parties and is always a hit. These sandwiches was brought to guyana by Britain.

Wonderful! A very similar spread was popular with folks around the Gulf coast in the US. My mom used to make essentially the same recipe but with lots of pimento. I remember putting it on EVERYTHING! Perfect with Rooster Sauce (Louisiana rooster sauce)

I make this pretty often for my in-laws. They love it with Crix. I actually do mine in the food processor using white cheddar/monterrey pepper jack/gruyere cheese (sometimes I go overboard and do a mixture of all three. It's pretty versatile, I've stuffed them in mini fall peppers for poppers (appetizers) and even used it as a dip (folding sour cream) to eat with pita chips.

This is classic Guyanese food. I'm sure this is still popular in Guyana and with the older crowd everywhere. from British tea sandwiches. What the people in the "big house" ate on their verandas, while looking at their workers doing the back breaking labour in the fields.

In Puerto Rico we do something similar. We use Velveeta cheese cubed up, a small piece of onion chopped, roasted red pepper, spam cubed up and a lil bit of milk or evaporated milk to thin it out in the blender. We mainly use it for parties or get togethers.

I make cheese paste with cheese (obviously), mayonnaise, mustard, butter and pepper sauce . Never knew about adding in onion, carrots etc.
