Francesco, just a little tip about the care of your wonderful Chinese knife. When you transfer the chopped vegetables into the pan, don't use the blade side, use the back of the knife instead. Using the blade side to scrape the veggies down into the pan will ruin it and you'll need to sharpen it more often which, well...is going to ruin it. I hope you don't mind me saying that but I'm the proud owner of a similar knife and I was given this tip by an Asian chef so I thought I should share it with you. Great recipe by the way!

Fun fact about Edam cheese. It is the only cheese that is made backwards. I had to slip that joke in there. I like the use of the potatoes as vessels for the veggies. Thank you!
