Before the pandemic hit earlier this year my buddy was going to one of Sam's restaurants for the first time. Sam noticed my friend from across the room sitting alone and went straight up to my friend and sat down and hung out with him for most of his meal. He was kind and welcoming and it really secured us as die hard fans. This man is legit. Sam and I also shared a facetime conversation through my friend's phone because I live far from San Diego area. The food and drinks were also great, Sam even brought him some sides on the low.

He didn't even use raw garlic. Only roasted. So very mild garlic flavor. Not for knots!! Slacker. And he never let em rise. And he basted them, you never baste garlic knots, you toss. God!!

Here in Philly our local pizza places have been making garlic knots for years & how they do it is take plain pizza dough cut it into strips tie into knots bake them until golden brown take a bowl pour olive oil & minced garlic into it drop each knot into that mixture totally coat them pull out with slotted spoon put on a plate or a container sprinkle parm cheese on top & a little parsley ( optional ) & serve with a side of marinara. They are perfect

As someone who has made pretzel-bagels (from bagel dough), it's actually quite easy to make pretzels with the right kind of dough. Getting that browned crust was just a result of dunking it in some boiling water with added baking soda for a short while, then baking them in the oven like the rest of the bagels Making the dough would probably be the harder part, honestly.

I worked at a Mediteranian restaurant and they did roasted garlic with a slice of cambazola cheese, and they would serve it on top of a piece of pita bread and when it was all said and done the best part of the dish was that pita bread that soaked in all the melted cheese and garlic juices. Makes my mouth water just thinking of it.

These are great! Try Pepridge farm puff pastry thinned, shred Jarlsberg, sprinkle with crumbled bacon. Fold, twist, put shredded Parm. Bake and serve with honey mustard dip. People go wild for these at parties! Great Job.

I used to work for an old Italian lady at an Italian restaurant, but never did the fold and stuff thing, but we always let the dough rise before throwing it in the oven. If you want it to rise, then use a Clean wet but ringed out dish rag, take the dough knots put them in a semi warm place, not cold, and drape the wet towel over the top so the dough wont make a shell. They will rise about double the size in 30 to 45 minutes.

Not Not Knots. Roasted garlic, a true culinary delight and so easy to make. Nicely executed and well explained simple bread recipe that most folks should be able to follow without any problems. Personally, I'd leave out the chili flakes, but that's just me. I'll make these but I'll replace the chili and Mozzarella with a nice layer of grated real Comté, Emmental or Gruyère cheese that's been imported. The melted butter on top makes this a true naughty but nice delight.

When I make roasted garlic, I do not do the chopping of the top move, but I do everything else the same. I find the quality of the roasted garlic is the same and you get MORE!

What if you cut the bulb in half, drizzle with olive oil, then roast both halves. Nothing is wasted and the oil seems to add a richness to the roasted bulb. 🧄

Recipe below: Instead of griping that Sam doesn't do recipes I'm going to help Make America Cook Again and just key it in here: 1. Trim a garlic head by one third to expose the meat. 2. EVOO, S&P, form a foil basket, bake in the oven at 400F for 40 mins. 3. Squeeze into a small bowl, scrape with a spoon. 4. In a mixer bowl: 2C flour, tsp sugar, tsp salt, tsp dry rosemary, Tbsp EVOO, tsp fast acting dry yeast, 2/3 C warm water. 5. With the dough hook, mix to smooth, elastic, and beautiful. 4 mins. 6. If it's way too sticky, add a little flour. 7. Flour a board. Roll it out to a thin rectangle with a pin. Hopefully 16+ inches wide or so. 8. Spread the garlic paste on half. Sprinkle with pepper flake. 9. Add low moisture mozzarella plus other cheese/herbs/flavor 10. Fold the plain half on top of the ingredients like a taco. 11. Roll a little more to tighten it up because we will be twisting them. 12. Make 1/2 - 3/4 rope slices. Put a few twists in it like a twizzler, then do a simple overhand knot. 13. Bake at 375F until they get a little color, or maybe golden. Maybe 20 mins, but go by light color. 14. Melt half a stick of butter, S&P, and some chopped parsley 15. Baste the garlic knots with butter sauce.
