I used tomatoes and onions only...just because when we were kids Mom used to save some of Sunday's rarely served roast beef and make a beef and rice casserole, with tomatoes and onions, for us for Monday supper!

just made it and I added a can of drain rotel to it and little extra cheese and a whole bag of 3 pepper blend with onion from Kroger and 1 onion, turn out 10 thumbs up, will be making more often.

I love how you can use ingredients that you already have and make such delicious casseroles!! You do all the clean up while it cooks so you only have the casserole dish,cause no one wants to do dishes after dinner!

Love your SF shirt…miss living there so much!!! As for veggies, I’’m not a big pepper fan, so I would probably put frozen corn, frozen peas, and fresh zucchini…my husband would probably spice his up a little bit, lol…I’m a pepper/heat sissy. My favorite casserole (I guess it’s a casserole) is corn pudding…so good!!!
