Would definitely recommend running the blended pepper mix through a mesh sieve. Otherwise you'll end up with a bunch of tiny pieces of tough chili skin in the sauce, almost like sand.

Just wanted to point out that your channel is the reason why I started cooking at home a lot during COVID and now. Before I barely cooked and now I try to cook everything I eat, this video was perfect as I was just planning to make Birria in a slow cooker after the holidays. Cooking is a pastime my wife and I have shared since we met. We’ve also taught our three children how to cook. Cooking is something we do everyday and we get to spend a lot of time together making tasty food. We enjoy Sam’s show and watch it for inspiration often. I suspect that you'll have to go throght hte "gatekeeper" of the clicks - Max to have that happen. And I get the impression that Max is not a liver person. And he'll claim that the liver and onions video will not do well, and Sam should do another burger video instead. "For the clicks and the likes!" Hopefully Sam will tell Max to go to hell and do it anyway!

If you don't have time, storage/countertop space or money to waste on a pressure cooker you can always use the traditional stove top cooking method. I think that's what he used on his birria tacos? If this post looks funny that's voice to text you'll just have to deal with it,. 😅😉

Merry Christmas, Sam and Fam! This looks simply Amazing and I can't wait to make it. New Year's Eve will be perfect, I think. I have a serious request of you. Please make stand alone tutorial videos of the different appliances you use in your videos. Specifically the pressure cooker in this instance. Max's perfect shot which made you contort (lol) to set the timer, etc. was edited out/poorly and I, as a brand new (and intimidated) pressure cooker owner, was hoping to watch you work yours. I have looked for tutorials and have seen a half dozen that are quite useless from a teaching POV. You, Sam are one of the best and most colloquial, and entertaining cooking teachers online and I know you would do quite well with this type of content. I'm sure many of your other subs would benefit greatly and entertainingly from your personal walk-through of the different cookware, gadgets, etc. Thanks for your channel and Happy New Year!!!

As have I - I made about 5 pounds of it the most recent time and vacuum-bagged some for freezing. I have heat-and-eat birria ready to insert into my face hole whenever the craving strikes. Also, Sam's carnitas recipe is dynamite as well.

Watch out with the Chipotles. Especially the adobo sauce they're usually soaking in that can overwhelm the flavor of your guacamole really quick. Ruin it if you're looking for a tasty guacamole or you can create a whole new thing.. creamy avocado adobo Chipotle dip/ sauce 😁

I good birria doesn't need stock. Use a mix of goat (30%), wagyu (20% for the fat) and 50% black Angus chuck roast. Trust me it's the best ratio of fat/muscle meat. Around 70/30- 80/20 depending on fat content of chuck. The higher the fat, the crispier the tortillas.

Ok, hear me out: Sam needs to go bankrupt. Not REALLY.. just pretend he did. Go back to the poor-man's grill and basic equipment. Sam relates to this already, because he often speaks of affordability and efficiency with his ingredients, making great use of leftovers and buying bulk things or generic / offbrands. Looks delicious, never had Birria so?? Your channel has been a lot of fun, especially during these covid times. It has also cost me a lot of money lol. I bought the Nikiri knife, sooo many seasonings they won't all fit on the lazy susan, I just bought a cast iron pan( bake element burned out on my stove and part is back ordered), and a garlic press. I've decided I need a blender and the insta pot cooker so that's gotta happen too. A couple days ago I made the Parmo with that beshemel sauce (spelling?). So freaking good!!!

What shutter speed/shutter angle you are using? When you are doing any digital readouts like the screen on the pressure cooker try to match it to stop the flickering screen It may be possible to fix in editing by taking a screenshot @ the same level and angle of the video camera of the timer and just to show the start time. You could go crazy and make your own count-up timer or just use black to just overlay to hide the numbers in the editing. I don't know what you use but all basic editing software can do this even the freebies cause that is what I have used in the past. Even iMovie can do it and kinda track if it was moving. Hey! I have a bit of an idea that may sound a bit out there. Everything is better when it's chicken fried. So how about Chicken-Fried BIRRIA, and the sauce is the gravy!! Think about it😎

Over the Holidays a group of my friends decided we would meet twice a month on Sunday for a gathering where we all share a meal together. I now know what my first meal will be!! :) HELL YEA!!

Sam, I have been making this for years and didn't know it. I made carnitas and with the leftovers I added Colorado sauce and reheated it in the oven till brazed tender. The tacos, burritos and enchiladas are fantastic. BUT, try deep frying a burrito then grilling with the Colorado sauce. Now I know what to call it Barria ! Hey look , I'm learning more Spanish !

And the Poblono/Pasilla confusion continues! Poblono is the fresh pepper, dried it is called Ancho, Pasilla is the dried form of a completely different pepper called a Chilaca. So, Poblano/Ancho is the same pepper, but for different uses, Chilaca/Pasilla is the same pepper, but also for different uses. Poblono/Pasilla IS NOT the same pepper.
