I made this and it was phenomenal. I did swap the gorgonzola with goat cheese as suggested as a substitute and topped with arugula. Felt like we were eating at a French Bistro. So good!!

Interesting. I make the ATK mushroom and leek crostata all the time. This one uses different herbs, cheese and different cooking techniques. I'll try it out.

They’re essentially the same thing, it’s just galette is French and crostata is Italian.

Hi ATK unrelated question. Which fabric is the best for an apron? That can handle stains, grease, and continuous washing? I have noticed that Julia always cleans her hand on the apron

Great video. I didn’t understand when you said you had a baking stone in the preheated stove, yet you still put the baking sheet in?

The sheet pan goes on the baking stone. The stone helps to crisp the crust but it's not necessary.

I would think right on the pizza stone so the bottom gets crispy. Good idea for pizzas too, easier to get the pizza in/out if it's on a pan, no pizza peel required and you don't have to bring the whole pizza stone out. Turn a cast iron pan upside down also (as long as the dough does not go over the pan), I cook my pizzas on that, I'd cook this on that too.

'Big no', why? The microwave is an effective way to draw out the unneeded moisture in the mushrooms and it's faster than sauteing - which you could also do - but all those leeks and mushrooms in that one pan makes for an unwieldy pile of food before they cook down.
