Chicken Sukka is originally claimed by Mangalore region of South India but I have come across its different versions made in different parts of the south and West India. I have adopted a mixed version of all.

OMG..!!! the bottom of the pan is so burnt that it become very unhealthy and definitely bitter in taste..

That is fond. The brown bits have lots of flavor that are brought into the dish after he deglazed it with water.
