It would be insane, because it would show that even chefs in professional kitchens do indeed have waste. Not a criticism, but to expand on the subject of food waste. I've just done this for the longest time as like a challenge for myself, and the thing is even when I was shitfaced back when I drank I would do this and I came up with so many amazing uses for things that nobody would have thought of sober lol Like with a little mayo and mustard and a whisk you can make a broth, even an instant ramen, feel much fuller and luxurious lol, throw in a bit of ginger from a sushi plate you had for lunch and a little pre-ground garlic from a tube and you have a legit soup.

I mean..... except for that he made a broth, made some noodles, and made some meatballs. And had already (at least attempted) to make hand pulled noodles in the past. Feel like i've seen FAR more impressive dishes from him even when he was just completely winging it without any sort of plan.

@@theElemDragonI agree. This was a nice dish that he made very well, but nothing that he did was very surprising for a "normal home cook" to do. Pulling the noodles was fairly good, but it honestly isn't that difficult to do it how Jamie did it. Is it easy? No, but it's not exceptional. And as always, Ben did a fantastic job of creating multiple small dishes with the (generous) amount of scraps he was given! He even made a seasoning with the peels and discarded root/vegetable ends, and added a quick lil' use for egg shells in there, too!

@@theElemDragon That seems a bit overly reductive. Kind of like saying "chopping some mushrooms, making a pancake, and wrapping some meat in puff pastry is unimpressive"? Oh wait... that's describing making a Beef Wellington. If you break down cooking *anything* like that, it sounds unimpressive. Snail porridge? Cook some snails, cook some porridge, blitz some herbs. It's the seasoning, plating, and cooking (expecially proteins) that makes the difference between food, and an experience. All three of which were on full display today. Well on Jamie.

@@harmonic5107 True..... except that he made the broth in a pressure cooker with water, vegetables, and chicken. Seasoned some pork and made the paste for the meatballs which he also boiled, and boiled the pasta. The rest was just thrown-on pre-cooked additions as garnish. He basically made pork meatball ramen. Could I have done it? I'm not a chef, and I don't even consider myself a "cook", but aside from the noodle dough ingredient ratios, It seemed simple enough to do and still come out with a half decent dish. What Ben came up with using the scraps? Not a chance I'd be able to even THINK of any of that on the fly even with the ingredients laid out in front of me. And yes, oversimplifying cooking dishes can make them all sound trivial to make. But in the case of Beef Wellington, you also have to make sure that it's baked perfectly, otherwise you could end up with anything from nearly raw beef and barely baked pastry, to slightly overcooked beef and roofing shingle pastry. On the other hand, pasta typically floats when it's cooked or nearly cooked. Meatballs float when they're about done when boiled. He also added those other seasonings to the meatballs... and then boiled them, which probably ended up seasoning the "porky water" he gave to Ben more than he did the meatballs he used in his dish.

@@theElemDragon you are drastically underestimating the difficulty. I'd suggest, try making just the noodles. You'll quickly find out how difficult just that step is. Too much water? They don't stretch right. Too little water, they break. The amount of water you need to add will depend on the fineness of the grind, the varietal of the grain, and your local conditions. Following a recipe may or may not work, then you have to actually have the skills to work the dough properly. You are either underestimating your own skills if you find it easy. Or overestimating the skills of the average normal cook.

OMG I literally screamed nooooo when I saw J just garnished the noodles with raw lap cheong ("wind" sausage) and "uncooked" tofu puffs. 😮🙈 Lap Cheong is raw and needs to be cooked and the tofu puffs can be eaten out of the packet because they're technically cooked by frying in the factory, but they'll be chewy and dry AF if you don't boil/simmer them. Hence why they're normally dropped into hotpots or soup bases to boil for a bit to let them soak up all the goodness and rehydrate. But otherwise, fantastic to see what you can do with scraps to avoid food waste, especially want to taste that egg custard.

I'd love to see a Scraps themed Pass it On. First the normals have to go through a Pass it On, but after it is completed the Chefs then need to take the scraps from the normals and use that as the basis for their Pass it On.

Almost nothing Ben used would have been tossed in the bin, though. Eggs would go in the fridge as would all the meat. Won ton wrappers would have gone in the fridge or back in the freezer. The only thing Ben 'saved' from the waste is the stuff out of the InstantPot and aromatics - even then, most of the ginger would have been saved for another day as it lasts a long time. Likely the same with garlic, but I didn't see if Ben used any whole cloves or not. Having to purchase more than you need because it comes pre-packaged is a real problem and does contribute to food waste, but it does not instantly make the extra food 'scraps'. It was a real cop-out for Ben to use them as such in the video.

Some chicken from the wings and a bunch of aromatics. It's not going to make for much good content if Ben auto-fails the challenge because of that. Besides, the purpose of these videos is to get the audience rethinking how they can use scraps, and whatever Ben did definitely achieved that.

Ben smashed it, the broth of any ingredient holds everything. Let it be veg or chicken or any ingredient's broth, once you boil it and strain it has all the nutrients are in the broth which creates the flavor and taste.

I'm Danish living in Portugal, and I can honestly tell you that the rest of Europe's thoughts about the English kitchen are not very high. My respect and admiration for English chefs have now risen dramatically because of you, Ebbers! I love your show! ❤

It's a very satisfying series. I've hated food waste for almost my entire life (probably 0-4 years, not so much but several decades after that) so it's so much fun seeing it being creatively foiled. And I just had the thought "hmm, maybe I can make bang bang noodles too."
