Some people are more sensitive to bitter tastes than others, and their genetic makeup can determine how bitter they find broccoli. There are test strips to find out if you have the 'bitter gene' TASR38

@@KendallClark-te9pf Yes, that's right, usually they'd do the blind tasted test at around top 8-9 in the competition when half of the chefs were already eliminated. In earlier seasons they even did it at top 6-7 since they had fewer chefs competing back then. S16 is the first and so far, the only season to have this challenge happened pretty early on the competition when there're 11 chefs competing.
