I am a Canadian living in Spain, and I absolutely love this channel and this man. He is so humble and yet always ready to reconsider how he does things to improve. It filled me with happiness to see that he opened his own restaurants as he's been helping so many people around the planet to learn how to cook proper Chinese food. You can tell that he really thinks things through when doing some thing and then he puts all this heart, efforts and hard work into it. I send him all my love from Europe and wish him all the success that he deserves. I have a technical questions: does he puts the live fish into the descaling machine without slaughtering it before? It seems like he slaughters the fish after? Is that for freshness?

No the fish is killed before entering into the machine, what you see after is just the nerves of the fish not yet dead. highlighting its freshness.
