As a Chinese I would say Chinese cuisine itself is great but many of the commercial Chinese restaurants now don’t do much help to keep a good reputation. I remember back in 1980s the chefs skills were very traditional and classy many Chinese chefs went to Europe to do presentations but now it’s the opposite fewer and fewer restaurants and chefs give F about quality anymore our food became the synonymous with cheap which is sad

hi! Can you say, how much times you reuse oil like this? Let's say deep frying fish/chicken in the oil, the oil will be throw away after single using?

Hello, the oil is reused and will be used when cooking other dishes, so the oil will become less and less until it is used up.

Sichuan is inland province so there probably aren't any recipes for sea fishes specifically, but all the fish dishes in sichuan work with sea fishes too I'd assume.
Could someone please tell me why liquids are always added around the outside of the Wok in a circular motion and not just added to the centre please.

could be to avoid splatter or to gradually increase the temperature of the liquid before it is mixed with the rest of the ingredients so their temperature won't lower too much.
