I've always kept the bones and skin. I just drain off the liquid. I've even used Mackerel instead of salmon. You could do this with tuna also.

The only problem with mackerel is that every brand I've been able to find, the bones aren't nearly as soft as they are in the worst salmon brands. Just gotta make sure to smash them really well.

Just had salmon patties for lunch yesterday. I too add onion and bell pepper. And I can't have salmon patties without pea sauce. That's how my mom always made them, so it was something I grew up with. It's just a basic white sauce (seasoned to your liking) and then adding in some frozen peas and warming them through. Spoon onto salmon patties and enjoy. Delicious.

I’ve always added an egg as a binder but had never heard of chilling them before frying to keep them from breaking. Thanks Pam!❤ I also have always preferred mixing in the cornmeal . I use seasoned fish fry. I wanted to compliment you on your method for turning the croquettes! That was a very safe way to turn frying foods and I hope everyone was paying close attention. I’ve been burned a lot! So I know how important this is. I also use the back of the spatula for lowering my foods into the hot oil instead of with my fingers. With the doctors report saying rheumatoid arthritis and neuropathy on top of fibromyalgia safety tips in the kitchen are very helpful ❤thanks again Pam. Those bones turn to powder if you press them just a little. But they contain alot of calcium. No harm at all to eat. However I take them out for my cats and dogs. I also remove that black skin, only because it's so fishy tasting. But thanks Pam, I haven't had these in a while. I'm going to soon now. Love you so much. God bless you

Hello Ms. Pam, love your channel. I come for your beautiful smile and wonderfully relatable personality. I've replicated a slight few of your recipes with somewhat success. I am not really a cooking type of person as I live alone, hate grocery shopping and like nothing about cooking, because its a waste of my time. I am, alas, the perpetual dinner guest anywhere I can get in and fit in.😊 I'm the only princess with 4 princes in our family and I'm invited to their homes or meet out for dinner 3-4 times a week. My mom and dad were both culinary experts. Dad was a cook in the US Army and then at the neighborhood firehouse. My mom was a cook for Wealthy families in Grosse Pointe, Michigan, the home of historical auto barons. The mistresses of the houses would borrow my mom for their special events. I'm saying this to say that mom and dad, and world renowned 3 Michelin Star awards, Mr. Gordon Ramsey, would always vary the ingredients of croquettes but never the cooking method. The most important is to make the patties into a round ball, and once the first side of😊 the ball cooks, then flip the croquet over THEN press flat with an unslotted spatula. But your final product is fantastic. Keep up the good work. 👍🏽
