INGREDIENTS:
For the deli meat slices:
Dry ingredients:
1 1/4 cup vital wheat gluten flour
1/4 cup cornstarch
1/4 cup chickpea flour
1 tablespoon nutritional yeast (optional)
Wet Ingredients:
1 cup of water
100 g firm tofu
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon mushroom powder (optional)
1 teaspoon salt
a pinch of black pepper
1 tablespoon of oil (or tahini, or 2 tablespoons of peanut butter)
1 tablespoon soy sauce
1 tablespoon of white miso paste
1 teaspoon of lemon, lime or vinegar
1/4 teaspoon of sugar
1 1/2 teaspoon of poultry seasoning
For the simmering broth:
4 cups of water
2 tablespoons of vegetable bouillon
salt to taste
pepper to taste
1/4 cup of soy sauce
1/2 tablespoon rosemary
1 teaspoon of whole peppercorns
3 cloves
4 whole garlic cloves
1 medium onion, roughly chopped
🐥 POULTRY SEASONING
2 1/2 teaspoons ground dried sage.
1 1/2 teaspoons dried thyme.
1 teaspoon dried marjoram.
3/4 teaspoon dried rosemary.
3/4 teaspoon ground nutmeg.
1/2 teaspoon coarse ground black pepper or peppercorns
1 teaspoon smoked paprika
Blend all ingredients until it turns into a powder.
METHOD:
Add all the dry ingredients in a bowl mix until well combined
Add all the wet ingredients in a blender and blend until well combined
add the wet blended mixture little by little to the bowl with the dry ones, (you might end up with some remainder wet mixture, it's normal, your dough should be moist and firm as opposed to dry and hard and crumbly) mix until well combined, divide the dough into two balls, let it rest for 5 minutes.
put the dough balls separately in a mixer or food processor, mix in medium speed for 3 to 5 minutes.
wrap them in two sheets of aluminum foil, place them ina pressure cooker, add two cups of water, set the pot to high pressure, then cook for 1 hour and 30 minutes. If steaming, steam for 2 hours, adding water to the pot when needed.
Remove the seitan from the pot, let it cool while wrapped for at least 30 minutes before unwrapping,
make the broth by adding all the broth ingredients to a pot, add the two seitan logs to the pot, bring it to a gentle simmer for 30 to 35 minutes.
turn off the heat, let the deli meat cooling down completely in the broth before putting it in the fridge. Lasts up to a week in the fridge and up to 3 months in the freezer.

Edit: I have said "1/4 cup of chickpea flour" twice in the video, it was an editing mistake, you add 1/4 chickpea flour only once, and the wet mixture you add little by little :)

I so agree. If Jana was American she'd be a vegan chef superstar. But if she wasn't Brazilian living in Spain she wouldn't have all the nifty ingredients which make her the vegan scientist chef she is ❤️

Hello from Japan. Thank you for sharing this amazing vegan deli meat recipe. It’s really unique and creative. In Japan, Veganisim is getting little more well-known and we started having vegan cheese and soy meat at a store but we don’t have vegan sausage or ham yet. Oh my god, really??? I absolutely LOVE Japan and its food, I've stayed in Osaka for over a month and fell in love with the place! And yes, Mr. Jay is an elderly rescued cat and he's very patient and very chill... :)

What an interesting last touch to simmer it in a flavoursome broth - I will have to try it, thank you! And that broth afterwards can be used for a soup or a stew, no need to waste the goodness! 🙂

I have been vegan only a couple months. Have tried repeated seitan recipes and they end up in the trash. This one though...... this is amazing!!! I can not thank you enough!!! I'm going to try so many more recipes from you. As for this deli meat, I am using the brine to make gravy and will have this warm over rice. Thank you again and btw....wonderful laugh!

Just wondering, since I can't have any soy, and miso is soy, is there a substitute. I really want to try this recipe, you make them ALL look sooo delicious. I was forced, for health reasons, into veganism. Not unhappy, because I love animals, but so distressed at not being able to eat so many of my fav foods and dishes. You and your recipes have given them back to me! I love you for that! Thank you so much!!!!!

I have always hated seitan but I'm going to give this one a try because you said it was good. So far every recipe I have made of yours is excellent even the banana peel pulled pork was a hit. And I loved the mushroom sage pasta.

Jana - because of our homeopathic doctors, my mother bought a stainless steel waterless cookware set in 1948 when I was only 3. Cuz of never eating stuff prepared in aluminum, I'm very sensitive to the flavor that aluminum imparts into food. I would love to make these deli slices, but is there a way to wrap the seitan log for the first step in something other than aluminum foil ???

Hello. The following is NOT directed at our wonderful and beautiful content provider, but rather just a general statement and 'grouse' about the food industry in general. I LOVE this lady and what she provides. There is just something about me that very much dislikes folks saying things that are not FACT, but just their opinion. Such as "This is so much healthier because there is NO GLUTEN in it". Not true. It just means that less than 1% of the folks don't need to worry about Gluten. Some facts: there is NOTHING WRONG, nor is it in any way unhealthy, for folks to eat food containing GLUTEN. LESS THAN 1% of the world's population has a health 'issue' eating gluten. You don't hear any of the on-line folks that are showing how to cook being either alarmist or lauding the positiveness of say - "IT'S SHELLFISH FREE!" 23% of the people can be killed by that. Or - "HEY! This dish is SO HEALTHY for you because there is NO FISH!" 14% are allergic to fish." Hmm... how about the wonderful peanut? Oh wait_ about 12% can be killed eating peanuts. But, why don't we hear food folks saying "... AND IT HAS NO PEANUTS, SO IT IS THAT MUCH MORE HEALTHY FOR YOU - RIGHT?" Nope, not really. So, okay. What about milk. Milk MUST be okay, right? Well, NOT for 3% - kills just as fast as some others, but mostly just bloating, gas, etc. Everybody, PLEASE stop making such a huge deal out of this GLUTEN FREE crud. There is NOTHING unhealthy about Gluten, unless you are one of the less than 1% who have a negative health condition regarding it. Mankind has been eating bread for WAY over 10,000 years, and the 'modern' bread we bake today was eaten as far back as 7,000 years ago. Despite what y'all might think, I truly LOVE this channel, and I have made several of the yummy dishes. I could care less about the TYPE of foods used. I am ALL ABOUT TASTE!!!✨🤗✨ I will always LOVE my meat & potatoes, and toasted bagels with strawberry cream cheese. But hey, a ton of what is shown hear is just plain-out DELICIOUS. This gal KNOWS what she is doing, and we should all give her dishes a try. Now, I KNOW there are those who will take the opportunity to respond with negativity, and wonder why I would use THIS CHANNEL to sort of spout off. Again, I just think it is SO WRONG to say something that makes a viewer think a thought that is not true. The PRIMARY thought regarding NO GLUTEN, because of all the not true information out there, is that somehow gluten free equals HEALTHY, and it is just NOT true. Okay, now I will go and change my KZbin setting to not receive comments regarding this post. I don't like nasty and mean people. lol

These taste great and are surprisingly super easy to make (as usual with Chef Jana ;-) ) Since we don't have a pressure cooker, I steamed them over a pot -- that worked out really well.

Chef Jana.......Hi from NYC, USA! I love your simplistic cooking of yummy vegan food. I also love you because you are looking out for the fur babies. I have a question. I'm always on the look out of making some type of mock-meat that I can use in a soup, stew, saucy recipe that won't become soft and spongy once it is soaked in liquid. Do you have any suggestions or can you work on a recipe someday?

Hi Jade! thank you so much for your sweet words! What I usually do is I seal the mock meat before adding to sauces or soups and preferably, seve it separated from sauces. To add mock meat directly into soups and sauces makes is taste like bread and all the not so pleasant gluten taste will be in the soup or sauce. :)

Hi Jana. Thanks again for yet another perfectly explained and demonstrated recipe. I'm not sure though how much of the wet ingredients to use. In the video it just shows you using just dome of it. I'm not sure if this means I should add just enough to make it wet or if you added the while lot just bit by bit. I'd be very thankful if you have time to answer.

Hi Julie, I meant add little by little as opposed to add it all, its best to add rather than try to remove the liquid from the seitan, which is impossible. But I have used it all, yes. :)

Thank you for teaching us such good stuff! I wonder if in place of oil and the other options for it would avocado or coconut top from a can of coconut milk work? This deli meat will be nice for road trips when we pull over and create a picnic.

Looks great! I keep seeing tofu in seitan recipes. I wonder if this is a vital ingredient? Does it add texture/moisture? I'm not anti soy, just not a huge fan of tofu's texture 😂 and wondering if there's any substitutes? Sorry to be that person!!!!

Great question, that's absolutely valid! The reason why I add tofu is to add some other texture and neutralize the gluten taste, and to spike up the protein levels as well ;) But you can use beans of any kind, lentils, peas, chickpeas, and even potatoes.
