2 minutes in, I'm cracking up already. This guy is the best. Other chef channels are always perfect. This guy is like me, makes a mess, kicks the oven closed, spills stuff, and forgets to add stuff. It's OK to be imperfect. It's actually normal. This is my favorite channel by far, not even close.

That’s why I like him too. I get so stressed trying to cook. But he makes cooking seem easier and the coolest part is that I often recall the ingredients and steps in preparing food. I joined about a year ago and I’ve made many dishes (around 10). I’ve made Parmesan chicken at least three times.

I'm staying with my sister who is undergoing a particularly grueling cancer treatment and in hopes of finding her some comfort I started showing her your videos last night. Of course, she has no appetite, but I thought she'd find your demeanor fun if only just for a distraction. She seemed to enjoy them for a few minutes but quickly tired. Then I woke this morning to her laughing and sure enough I heard you ooh-la-la-ing in the background! I can't thank you enough for the generous spirit you give to the world that helps us smile during even the most difficult times. Bless Chef JP!

You can make it a ring tone. Use an audio capture program. Make it an MP3 and transfer it to your phone and select it as a ring tone. Actually, I just did it. You can e-mail me if you want! Maybe we should ask chef if that's ok(?)

Okay, this will sound weird but…Chef JP and his antics helped me get over grieving for my late husband! I love to cook and had stumbled on this channel as a new widow and laughed for the first time in quite a while. It’s been 2+ years and I am still watching and trying the recipes. These wings will be my supper tomorrow!

I am so glad you said to keep the tips for stock. Too many people just throw stuff like that away. As a hunter my goal is always to get as many meals as possible out of every part of every animal. People who buy their meat from the grocery store tend to lack appreciation for what they are throwing in the garbage.

There is simply no other way to describe Chef Jean Pierre than generous - with his time, with his knowledge, with his personality. You can learn to be a great home cook by watching this channel - but you can learn how to be a better human being just as easily. I for one totally appreciate a professional chef who takes his precious time to teach those of us who really want to learn. We make one of his dishes, at least 5-6 times a week. No leftovers as we make for only 2 peiple. That's what is great about his recipes, they are ex to adjust! (Except for cheesecake) no cutting back there! 😆

My husband and I are big fans also...after I do my yoga with Adrienne KZbin in the morning, I turn on Chef Jean Pierre. We watch 3-5 videos, then decide what to fix for lunch. Great way to spend our retirement!!

You're so right, Chef. I used to think I would get less clumsy in my youth, here I am at nearly 60 and I still knock an elbow in a doorframe at least once a day. "A falling knife has no handle" is the best kitchen advice I ever got!

2 Pro Tips: (1) Dry the wings in the fridge in a dusting of corn starch & flour and the dry rub mix on a cookie rack to crisp up the skins. you don't need the oil then and (2) Cook the wings on a cookie drying rack on the pan so the wings don't sit in the oil from the bones and get even more crispy....... :)

I am always delighted by the way Chef enjoys his own food. The energy throughout each episode is always entertaining, but the pièce de résistance is the moment when he takes his first bite and his eyes widen with wonder and joy at how good his own food tastes. So many chefs analyze their food to death - I don't want or need a science lesson on the molecular compound of an acid and how it affects taste - tell me it'll work in a recipe, make it, then eat it and giggle with glee when it's perfect and I'm sold! Thanks for another marvelous episode!

I will never ever get sick of this channel. And YES on the blue cheese, I recommend to anyone who will listen to try just a little bit in a sauce like this. It adds a subtle nuttiness, and you don't have to eat great big chunks of it.

I just would like to thank you Chef Pierre for expanding my horizons and giving me a little confidence in my cooking. I have not been following you very long, but you have already taught me so much. In the year I’ve been following you I have bought a 2nd freezer and have it stocked with your recipes of beef, chicken, vegetable stock, beef bolognese and Marianna sauce, as well as minestrone and French onion soup. I have honestly never bought a leek or shallot before I watched your videos. I’m going to make my wife your cheese filled potatoes Sunday with some steak and broccoli. I can’t wait to try it. I’ve never used goat cheese before and am eager to try it. I can’t thank you enough for what you do. You have honestly given me inspiration and awakened my taste buds. My wife and myself have gotten burned out on our normal food routine. After your videos, I am making many new dishes and sauces to make a meal that is memorable. You have made eating enjoyable again. I am truly grateful.

I was going to look for wing recipe later today to make for the Super Bowl. I don't have to now. Chef JP is right about the bleu cheese. Up until a few years ago I avoided it because, to me, voluntarily eating mold was nauseating. What changed my mind was buying some wings at the deli counter at my grocery store and grabbing what I thought was a couple of ranch dipping cups. They were bleu cheese. I tried them and they were great. I now always have a bottle of quality bleu cheese salad dressing in my fridge.

I made these tonight and all I have to say is they were “AMAZING”! I put mine on my smoker at 400 degrees instead of the oven and they had a light Smokey flavor that added to all of the wonderful ingredients that are in this recipe. That dipping sauce is absolutely delicious! I think chef that you need to expand and add a smoker and maybe an outdoor kitchen to the mix. I have pulled off your recipes numerous times- your creme brulee, the stuffed pork loin, the mashed potatoes, the Mac and cheese recipe, chicken and beef stocks, the coconut chicken with panko, port wine reduction sauce-- over the course of a little over a year, I am 400% improved in the kitchen and I LOVE COOKING! YOU SIR ARE AN AWESOME DISCOVERY. NOW WINGS FOR SUPER BOWL TOMORROW ! I HAVE ALSO PURCHASED SOME OF YOUR 18 YEAR AGED FIG BALSAMIC ! THANK YOU SO MUCH AS YOU HAVE CHANGED MY LIFE FOR THE BETTER.

I cannot believe that this is my fav, fav show on tv or youtube. I just love it! Chef, you are amazing, the perfect imperfection. The imperfect perfection. But great in every aspect. 8:20 to 8:40 "i' don't think i've ever made it twice the same" That's a person who cooks and loves what they do. They know the basics and the style, but they make every batch fit the variables and whatever stands in their way. There's many things I make that aren't made the same way twice. I look at cooking as an art. You will pick a style or three and go with what moves you if you let it. It may be amazing to the masses or may suck more s*** than the truck emptying your septic tank. Either way, you learned something and the next batch will be even better. I never get tired of learning from Chef JP.

Been wanting to make this comment for a long time. Chef I love your channel. My mom's side of the family was French - Italian. My Grandfather was born in Paris but they moved to Piemonte Itlily, my Grandmother was from around Lake Garda area maybe Genova. Anyway Your accent is what I heard from when I was young and I love it. Also many of the dishes you make. You make them wrong of course :-)) but so do I (if following grandma's way) . During the war Mom was allowed to work in the kitchens of The New Yorker, Pennsylvania Hotels and Lonchomps (SP) Which was in the Empire State Building, more French dishes. BTW these restaurants were a big deal back then. While she was working For Max Harbor (Harbor is not the spelling but the sound of his name) she stole a lot of his recipes (mostly salads) and He knew she was doing it and very good at it. Chefs were very protective of their recipes and one of the most secretive was Alfredo. One Day She came to work at the New Yotrker and Max told her she was fired and was now working at Alfredo's (she was very upset and did not want to work at Alfredo's) Max told her she could come back when she had Alfredo's secret for his noodles. Alfredo was very suspicious of this new employee but let her work in the kitchen. She went to work spying on him as he made his famous dish. First week she took what she thought was the recipe she went back to Max. Alfredo being suspicious made it wrong Max yelled at her and sent her back. The second week same. The third week she got it as Alfredo was distracted. The secret is in the noodles. So unless the noodles are home made you have never had NOODLES Alfredo. Some where I have that recipe and actually made once. It is nothing like you get in a restaurant. I may have to only real recipe. As to measuring: Mom was a food scientist and measured precisely (she went Cornell). I have been yelled at many times because I don't measure when she watched me cook. However the result was even she admitted the dish came out as good or better. So I totally agree learn to cook with out measuring let intuition take over you will be a better cook. My only regret is that when I die no one will carry on with the family dishes I'm 72. When I go who ever cleans up will just give them a toss.. My sister are not cooks never learned to cook these dishes. I think they are too much work for them to bother. Anyway Chef thanks for the few moments bring me back to my childhood with the accent and mannerisms.

I worked in a bakery and I had to make fudge every day and the guy next to me mixed brownies every day. I'd have fudge all over me and my colleague never had a drop of brownie mix on him. Lol. What gives? Lol.😂

Chef, I really enjoy your videos. I had two semesters of culinary arts at Palm Beach Junior College in 1965. Convinced me I wanted nothing to do with a restaurant kitchen! After four years of an Air Force crew chief. I started cooking again to keep from starving. Many Chef Videos later, I’m pretty confident in the kitchen and your wings are featured on my Super Bowl party this Sunday.
