If you eat a pound of food, then the most you can gain is one pound unless your stomach is somehow violating the laws of physics, which it isn't. If you eat by weight (i.e. use a scale to weigh all food and drinks), you can lose weight. Then you can eat whatever you want and maintain whatever weight you want to maintain at all times. The real secret to losing weight is to weigh the food you will eat before eating it. Many myths/lies are perpetrated by the weight loss and sugar industries.

My late Moms favourite dessert in the world was Lemon Meringue, I`ve made it for Her countless times over the years and the curd recipe i used was virtually identical to Chef`s recipe. It`s amazing, i just wish that my Mom was still here so i could make it for her and see Her face light up as She tucked into the crispy meringue piped topping. RIP Mom, love you. x

I love lemon curd and can't wait to make this! I made your crunchy brownies for the second time yesterday, and made a slight change this time...I took an idea from your chocolate chunk cookies (which we LOVE), and replaced 1/4 cup if the sugar, with light brown sugar. I figured it would make them more 'carmelly', especially with the heath bits in them. DELICIOUS!!!! Confession, they are almost gone! By the way, THANK YOU for making the notation, in order to double or triple the recipe...you are the BOMB!!! WE LOVE YOU and look forward to Monday's and Thursday's. Saw the bowl of sweet potatoes on your counter...hmmm, wondering if we will see a new sweet potato dish this week? I just made this!!!! I have wanted to make your Lemon Tiramisu since you posted the video, but I could not find good vanilla. I finally did (online lol) but by then it was time to plant our garden. Now that everything is thriving, it was time to try it. I honestly thought I would fail with a double boiler, but... IT IS PERFECT!!! OMG, JUST THE RIGHT AMOUNT OF TANG. It's not too sweet... It turned out perfect. It has been in the fridge for like 5 minutes lol. I am so excited I had to post this comment right away. Next I am going to make the syrup with Limoncello. Tomorrow, when my hubby gets home from a week on the road (He is a truck driver), I will have Lemon Tiramisu waiting for him. The leftover Lemon Curd I want to use in a stuffed French toast with blueberries. Blueberry and lemon together are fabulous. I have fresh mint in my garden for garnish and today I saw my first red raspberries in my yard! Perfect garnish with mint on the Tiramisu. This tastes so much better than the store bought with a ton of additives... Thank you 1000000 times over. Now I can just hope the Tiramisu turns out as well!

Perfect. I love lemon curd and home-made is unbeatable. A few years ago, I had forgotten to make a plate to take to friends' for a shared lunch. In a panic, l bought some mini tart cases filled with lemon curd and, to make them look a little more special, l topped each one with a strawberry cut into a fan. They were outstanding. I had no idea lemon and strawberry went so well together. Everyone commented on how good they were and l never admitted that l'd improvised. Definitely recommend making them with this.

Very nice, much easier this way than with a bain marie. First time I made lemon curd I used a glass bowl over boiling water, and as I was mixing it the glass cracked and lost the whole batch (and it was a large batch as I used 8 eggs!).

What a great recipe, I love lemon. As for needing a less strong burner, they make things called flame tamers that sort of work, but if you don't have one, you can stack one of you stove grates on top of another and use that. Obviously make sure it is stable and isn't too high. Mine stack stably to be about 1.5" taller and lets me use a medlow flame that won't blow out and still cook. Its only down side is it effectively prevents cooking on the rest of your stove at the same time.
