Amen, I can’t stand the videos where they play annoying music or stop what they’re doing and waste 10 minutes talking about their dog or aunt Thelma or other stuff nobody cares about and just trying to drag out the video to get more viewing minutes. I usually just shut them off 🤷‍♂️.

Try making it! I don't eat/do meatloaf. Ever. Disgusting. His is just fantastic. If you aren't a cook, it will be a bit time consuming, but the combination of ingredients is really, really amazing. Even my son, who despises meatloaf more than I do loved it. He briefly suggests trying it cold the next day. I honestly think the cold version is better than the fresh, hot! So, on to his chicken version. Seriously, get the ingredients together, get a loaf pan, and make it.

There is a HUGE DIFFERENCE, it's very obvious that this man has not only been in a kitchen for years but he also has taught those in his kitchen. This is what a Head Chef is & does. Much respect.🔪

I have been a Chef for 22 years, 54 years? For you to have been in the industry for so long, even before I was even born, I love your passion for creating delicious dishes, and it inspires me to keep going. Because cooking is not hard. I've only done a 40 stretch, not sure I'd like to cook in front of a camera, but cooking always makes me smile, especially now I'm not in the commercial trade anymore. Hope I'm still smiling in another 14 years. 😆

Exactly, especially the nonsense about not over mixing. If you don't incorporate the ingredients into a mix, the meatloaf will taste like crap. Plus another reason the chef doesn't have to worry about over mixing is through the sauteed onions, carrots and buttermilk will provide moisture to the mix preventing the over mixing BS

Made this recipe for a birthday dinner along with mushroom gravy and mashed potatoes. Everyone wanted to know where I bought it, as it was amazing!! The wow factor was through the roof and it looked just like yours did. Thank you, Chef!! Dinner was at six and everyone headed home early to pass out from the delicious meal. I'm leaving this comment at 8:30pm and feeling like a winner 🏆!

I just had to say hi after reading your comment of 6 months ago! That's just a nice story, I think people would entertain more I'd they just made yummy food, not fancy, it's all about the company! My neighbors across the street only buy expensive beef, and he smokes it. Their food is always amazing, but I just can't afford to cook that way. I've decided they'll just have to eat a nice pasta dish, or a seafood chowder, and we'll have a great time!

You are the first chef I've seen recommend making food for a neighbor. Growing up in Louisiana, my Momma, Nanny, Mameires, all my aunts, they all prepared food for sick and elderly folks who lived nearby. I've lived in New York, New Jersey, Kansas, Virginia, Florida and Texas and I've never seen such a thing done. You're teaching great values with your great recipes!! Thank you!!

I made this tonight for my dad’s 80th birthday…Everyone was giving compliments one after another (also made my brother chef’s chicken with mushroom&spinach sauce…amazing as well!) Chef, thank you so much for elegant and undemanding recipes and for being an amazing instructor. Not only do I learn from the recipes, but I learn from watching your techniques and then hone my skills. My stomach was growling and I was salivating while watching this. My wallet, on the other hand, was crying. Great video as always, Chef. You're 110% right that making good food with good ingredients isn't magic. I would add that the level of love we put into even the simplest of dishes can be a game-changer. You're an inspiration Chef. Teachers like you are why I fell in love with cooking before I was tall enough to reach the burners on a cooktop.

When I was 5 years old my Grand Mother who came from Ireland was making "Meatloaf" with and Irish twist- same meats but she ground all the meats. Added Lemon juice, and about everything you have only diced her bred crumbs at least 1/4 size. We heard a loud slamming from the kitchen and the family ran to the Kitchen - Grand Mom was slamming the 4 lb.'s of meat on t he counter top with a lot of force / many times. We asked why? - To remove any air space. That's what her mother did! She would also put 3 shots of Irish whisky. She also used barbecue sauce spread heavily. This brings back so many memories, I will have to try - it's been years 60+ years ago. Your knowledge and presentation caused me to subscribed......... Well done Sir!

Best things that happened in 2020: Every video from Chef Jean-Pierre. Amazing. What a great guy. Edit: Unless you've been a chef for 54 years I would suggest frying off a spoonful of the meat loaf mix before you put it in your mould, so you can taste it for seasoning. humble suggestion.

@@kimberleyjane2338 boy I'm not sure about that. There is an Asian themed restaurant in Chicago called Hot woks Cool sushi and it used to feature a Maki roll call the Obama mama. It was actually pretty good. They didn't do anything while Mr Orange was in office but I think they have something for Biden that was similar. It comes with little American flags

I made this tonight. It was very good. Just a few notes to myself. 425 degrees for 90 minutes was too long. When I checked it at 75 minutes it was already 178 degrees internal temp. Smoking this meatloaf would be a great addition. There was plenty of meat mixture left over for probably a second loaf. Just use two pounds of ground beef, a full pound of veal, a full pound of pork sausage. Then add a bit more carrots, onyons etc. Some swiss cheese lumped in the middle might be good too. If I could post a picture here, I would...mine came out looking exactly like Chef Pierre's.

I couldn't cook to save my life until I met my Grand Mother-in-law. Her Italian hands were those of an orchestra conductor in a kitchen with all its condiments. She made cooking fun. Just as you do Chef Jean-Pierre. Thank you.

Made this Meatloaf and it's by far the best meatloaf my family and I have ever had! Labor intensive if you are prepping within hours however if you prep a day prior or morning this is a breeze to make. Prep, prep, prep! Oh by the way, I yielded two, so I was able to to put the other in the freezer and simply lay the bacon when I am ready to cook the mix. I love cooking again! Thank you Chef.

Chef, I cannot describe to you the satisfaction I felt when I lifted the pans to reveal two perfectly bacon-wrapped loafs ready to be glazed and baked. One for me and one for my beautiful neighbor. I can understand why people lined up for this back in the day. Cheers to you, sir!

I’ve only attempted 1 bacon wrapped meatloaf (out of many that I’ve made) and I cooked it too long. I didn’t glaze it, and the bacon was very “crispy” (my wife’s way of saying I burnt it), so I never tried it again. YOU give me the confidence to try again Chef. Thank you for all you do.

I don't think I've ever had meatloaf in my life! For sure never at home. My mother never made any sort of casseroles either. I was born in 1940, a year before the US entered the war, & we ate very simply-veggies from the garden, fruit from the trees in our 3-acre yard, eggs (& sometimes meat) from our chickens. Meat was chops & roasts from the butcher. We never ate out, & I first ate out when I went off to college. But I still never ate meatloaf; the very name put me off. The title of Chef Jean-Pierre's video turned me off, but my curiosity got the best of me. The look of it as he (triumphantly, lovingly, proudly) cut it turned me off; it looks like the "maouche" of my adoptive Ardèche in France, which I do not like, though the ingredients are completely different. BUT, I'm still game, I may adapt the recipe for one & finally try meatloaf in 2021, at age 81! Thanks to you, Chef Jean-Pierre! Meilleurs Voeux, santé, Bonne Année!

Finally, someone confirms my suspicion regarding over mixing ground meat! I always found that weird, obviously if you don't mix it enough, the meat won't be seasoned properly. Thank you, Chef! You are one in a million!

@Chef Jean-Pierre I absolutely love the way you teach! I teach a technical skill every day to students. The way you regularly reinforce techniques is extremely important and helps the learner remember the lesson! The skill I teach is drastically different from cooking but the ability to teach is an art my friend and you have it! Not that you need someone to validate your skill but I wanted to recognize your talent. Not only your skill in the culinary arts but your talent for teaching. Not everyone can teach but you can sir! I made this one with meat that was ground for me at my butchers. All pure fresh meat and no additives. Then add mashed potatoes, carrots and mashed turnip. A mushroom gravy. Crusty bread. It was to die for. Thanks, chef. It is an absolute winner.

I love listening and watching this Chef. Besides having a great personality he doesn't try to act like cooking is something that everybody can't do. It's not rocket science... I love it! I also love that he takes an American classic and he isn't afraid to do it because of it's roots of being an easy American classic, and it seems like it's one of his favorites to make!!! Just made it for the family. The recipe was able to make two. Absolutely amazing. I made au poivre sauce with capers as a sub for the pepper corn. New potatoes from the garden and fresh peas from the garden. My wife and all three kids ate so much we skipped dessert. Thank you!

@@petirist9945 he said "3 or 4 eggs" so I used 4 and it came out nice. I'm not sure it would get messed up with 3 eggs, since it's (in my opinion) just acting as a binder and more protein/flavor. I think with most main ingredients you don't need to be too exact - it's more about blending the flavors and good quality ingredients as the chef says. Hope this helps, and happy cooking!

I've always wanted to become a chef, after seeing how much appreciation they would elicit, and how people were happy with their meals. I worked in kitchens for a few years as a line cook before moving on to another career path. I realized that my family enjoys what I cook, so in my head, I did become a chef because I get recognition from my family. Thank you, chef, for sharing your knowledge.

Made two of these a couple weeks ago. I sliced and froze one and we devoured the other. Simply delicious. I made a mushroom sauce to accompany it which was great but this meatloaf shines on its own. Thanks chef. This is now in my repertoire. DaveL

I had so much FUN making this meatloaf!!!!! I was surprised how delicious this smelled raw! In the oven while cooking…indescribable! Can’t wait to taste it in 30 min with green bean casserole and mashed potatoes and the gravy? Using the dripping from the pan! Thank you, Chef!

Oh. My. God. The BEST meatloaf I have ever made or eaten! My family and I snarfed this down like we hadn't eaten for a week. The next day leftover was amazing on brioche buns as a sandwich, too. 10 out of 10 recipe! Do yourself a favor and throw away all the other meatloaf recipes in your file and replace it with this. You'll thank me later.

Made this last week for my son and three grandsons and we all declared this is best meatloaf we have ever had!!!! Prepared it the day before (shredded the carrot instead of cubing it) and left it in the loaf pan in the fridge overnight. Had to wrap the inverted pan with hot washcloth to get the loaf out of the pan onto the cooking sheet. Then painted it with the glaze and cooked. DELICIOUS.

The first time I ground a Chuck roast I made myself a hamburger. Oh my goodness its fabulous. I never bought store ground beef again. The difference is astounding. My dad taught me to make kielbasa, we made it together every Christmas Eve. I hope never to forget it, I still make it. Three months ago a went to buy casing. They charged me 30 $. I almost fainted, that was for one pound. Lol

Chef, I love cooking with my kids and today while making this meatloaf, my youngest son was helping and said, with a French accent "Measure carefully!" It just made my day! It's one thing for you to inspire an adult to do this, but when a kid is doing it, you know you have that "je ne sais quoi". He imitated your voice as we put the meat into the pan, all those little "oh ya baby" and "pack it in friends". Your love of cooking not only makes for good food, but for good times in the kitchen with family. Food does bring us together!

as a german who just discovered this (because it kept coming up in my recommendations over and over again), i have to say: if alfred biolek had a youtube-cooking-channel (hope he does not, i did not check XD ), it would be somewhat along chef jean-pierre. i came to see what the meatloaf was about, i stayed to hear a french doing his cooking-channel in english saying "worchestershire-sauce" with an accent, but correctly; keep up the good work, you made a fan!
