I'm not saying that you are underestimating your audience, but by looking at the comments so far it is clear that many of us are quite interested in giving a recipe like this a try. So, good job on taking the fear out of it by demonstrating and explaining every step of the way. Many dinner tables will see unexpected displays of culinary goodness by your guidance.

I disagree. Most people who won’t be making it wouldn’t watch it. Even if they don’t make this exact thing, it’s helpful to watch the steps and get the idea of how a professional would approach a dish.

While the average home chef may or may not attempt a more complicated dish, I do think learning the techniques are valuable, as well as learning to make some of the components which can be used in other dishes as well. So thank you for bringing us this content, as I always learn something!

I have a raised a few organic ducks for eggs but one is too noisy and has to go. I want to make a very special meal for my family. This is perfect because it not only will be delicious but can serve several adult people. What do you suggest I serve on the side to compliment it that is not as labor intensive so everyone gets plenty to eat?

I made it with chicken. Thighs and breast. Sautéed strips of dark meat to put on the inside. Cooked until breast was 165. Everything else followed your recipe. My wife loves blueberry, it was her favorite so far. Shared a picture on your FB page. AMAZING!

As you said chef, it's more labour intensive than difficult. If the video was just the chutney, or just the confit, or just wrapping a duck breast in bacon... it would be so simple that "a child could do it!". So if all us foodies out there just break it down, one step at a time, I know we can all successfully create our own wonderful dish! Thank you for the challenge of such a luxurious dish to treat that special someone to! 😉

I have been a restaurant manager for over 20yrs. I came home to my kids and never wanted to cook because well because, anyways Covid almost killed me and I haven’t worked in over two years now. I love this man’s work. A pure professional. There are few KZbin chefs that I would even credit. I often wondered if Jean-Pierre is related to the (late) actor ‘Philip Baker Hall’ who sadly passed in June this year. The Resemblance is uncanny.

I love the more complicated dishes! The only reason I come to KZbin is for things I don’t know how to do…I want inspiration, I want to learn new things! I don’t want to make my husband the same thing every week over and over. My husband calls me the best restaurant in town❤️ It’s because of chefs like Jean Pierre & “complicated” recipes!

I’m a duck hunter, guess what we’re having Sunday for dinner. We’re going to have wild duck, some adjustments will be in order for the flavor of a wild duck but from now on we’ll serve the duck with a sauce. I often try your recipes and I'm a mum of 3 son's we really enjoy your recipes as something special just because I want to learn to be a better cook I feel at age 30 I am quite an accomplished confident cook I am self taught and your recipes have helped me become better. I cook recipes from all over the world if I'm honest I'd like my son's to grow up knowing good food with fresh ingredients! So your videos have been a huge help! My husband loves the steak with peppercorn sauce! We had the pork chops that were brined with sweet potato mash and the sauce with mushroom and onion yummmm that was amazing! I've learned more in the past month, when I discovered your fantastic channel, than I have in all of the years that I worked in my uncles' restaurants! Wow... your knowledge, your wit, your mannerisms, even your forgetfulness is all such a breath of fresh air!! You're the best, Chef JP!! I Know that you've done mussels in a white wine sauce, but I hope that one day you'll show us the Steamed Mussels in Pernod. That's my request. And don't forget to "measure carefully"... haha!!
