We made this Butternut Squash Bisque yesterday. It looked fabulous, had a smooth silky texture and deep roasted flavor. The best we have ever tasted. We didn't have a boat motor so we used our blender. We love all your tips and especially the one about flavorings should be in the background. Thank you so much.

I’ve loved Butternut Squash soup for around 40 years. I’ve cooked it myself for the past 20 years. Never thought of *peeling* the squash. It was fun to try, and much less dangerous than a big chef’s knife! I don’t add syrup or sugar to my soup (not any more, anyway). I taste it, and if it isn’t sweet enough, I cook for another 10-15 minutes. The squash gets much sweeter!

We made this for dinner tonight and it was sooo good. I never had Butternut squash soup before this and now I am afraid no one else's will compare. I didn't have any sherry on hand so I used more bourbon and it definitely gave you that warm feeling. Measure carefully lol. I made the topping with a little Tobasco and it really brought the whole soup together. The whole dish tastes exactly like autumn and I'm definitely going to hang on to this recipe. Thanks Chef! Also, something I wasn't expecting was the squash releasing a really sticky sap on my hand as I was cutting. I had to wash my hands about 5 times to get it off. If you decide to make this recipe and didn't know about this, here's your warning!
