I'm a builder with hobby interest i building cars, I've never cooked anything more than toast but I love this channel. I cooked for my wife on her birthday the chicken with lemon sauce and it was edible, even tasty but the look on her face was priceless as she clearly expected disaster and got something nice.

Chef you’re very funny. I’m going to share my recipe for the sauce. I use 500 gms of lean pork mince and 500 gms of lean lamb mince. The juice if 1 lemon a teaspoon of cinnamon garlic 1 medium onion oregano fry it all together until the meat is golden brown than add 2 tablespoon spoons 🥄 r tomato paste and I thin of diced tomatoes.

This is AWESOME. This is one of the many reasons why I love Chef JP so much - he doesn't just tell us the recipe or show us how to do something; he explains WHY we are doing things. A video like this is especially cool because it is prioritizing which dishes on the channel might be best for learning some of the most important techniques we'll use in the kitchen. Really, really love stuff like this. Maybe it's just me, but I often find myself sticking to certain kinds of dishes unless I really make a specific effort to try something different. Having a list like this to try out is GREAT!

IMO, you're spot on. Very few chefs in the public eye go into the details and reasonings behind the techniques. Alton Brown certainly does, as does Chef JP. They're my favorite role models for that very reason... They explain the 'why' and show the 'how'! I (and most likely "we") know how this channel started... And (IMO) what happened to Chef's previous venture is very unfortunate. However, that has also opened the gates to a new format for Chef, and the ability to reach so many more people. I truly believe that Chef JP is an amazingly generous person to share with the world all of the knowledge that has taken him a lifetime to learn. For everyone please remember, that until recent years, chefs guarded their recipes and techniques with their lives (really, their reputations, not literal lives)... And amidst all of the other "celebrity chefs" comes Chef JP, who really makes it real, relatable, and feasible for the home cook. God bless Chef JP, and the few others who are really sharing their knowledge.

The fact is, you work in real kitchens with passionate chefs... they are happy because they do what they love. You watch chefs who are insecure and nasty, and that is because they hate what they do and really don't know what they are doing. Every step JP takes tells me he is a master of craft. whether I would do it the same or not as my own master, it doesn't matter. I see what he is doing and I know why. The other guys (Marco aside, I like Marco) are trying to fit the mold that made GR famous. He is a promotions guy. GR is not nice and he is not a good chef.

Cooking is all circumstantial, fixing your mistakes and being in the mood more xyz instead of ABC this time. Sometimes you can get a 36% heavy cream and get a 40%. Proteins can be fed and raised differently. Was something grown in California or Mexico. That's what makes it interesting and what I live to do. When you make a dish and it makes someone feel an emotion other than a onomatopoeia emotion like "mm good", you know you built something rather than throw straight hotsauce on a chicken wing or American cheese on a burger. And no American cheese isn't shit, it's a processed cheese that's got some solid science behind it.

The biggest thing I learned from Chef is caramelizing onions for a braise. I used to add the onions in with the other vegetables at the same time when making a stew or chili and just sweating them. Caramelizing the onions adds a subtle depth of flavor to any braise. I will always take that extra step now. Thanks, chef.

I've never seen this chef before, but he is amazing. My meals always come out a bit off, and watching him, I realize I know how to cook my recepies, I've just been letting new people out there influence how I cook. Brilliant idea to rehydrate in Madeiro wine! Makes perfect sense. Makes me think it would be better 100% of the time to buy dried mushrooms (also cheaper - but I don't personally care about costs when it comes to cooking) and then use something else other than water to rehydrate... I love mushrooms... Great show and videos... I no longer watch Gordon Ramsay as much... The reason: The learning value from your videos is 100% top shelf - unmatched with any other chef's videos.

I have never been a chef although I have assisted and cooked for many people as a firefighter for 30 years. We made mostly comfort food that could be left off if we had a run or fire, but easily restarted when we returned. Sundays, and holidays we made stellar meals. One of the firefighters I worked with was a chef in a 5 star NY restaurant and he gave so many pointers, but was very demanding with tremendous pride about his finished products. I am learning a ton from you Chef and thank you so much for this. ( I am retired now, but absolutely love cooking and wish i did it more when I was younger)

I just discovered this channel. I love how he explains each step and why it's so important to follow the directions in order to successfully create a delicious dish whatever it may be. I just subscribed and now I'm going to watch all the videos. I just watched the beef stew segment and the tip on thickening with the strainer and flour was brilliant. I learned the trick about draining the eggs on America's Test Kitchen and now I do it every time I i make eggs Benedict. Really makes a difference. This chef is great!!!

Chef, I have learned so much from you...mostly the joy of cooking! I have made all but 11 of your recipes. I enjoyed the compilation, it brought back the memories of the recipes and meals we have shared. I have started going back through the videos, writing out the recipes, and my memories of what I learned, who I shared it with, and my changes I would make. Thank you for all you do.

I must try every one of these, they all look so appealing! I love learning to cook from you. Chef, you are such a great teacher and thank you for keeping it real. From you I’m learning the value of quality ingredients, mis en place, and techniques. I’m enjoying the process, and the results! My goal is to cook all 10 of these recipes in the next 12 weeks (cutting myself some slack lol) Sending big love to you and your family. Speaking of family…. 2 weeks ago I told you we lost our beloved pet cat, and I was cooking as a way to heal myself. 6 days later, we lost our second cat. I’m kind of in shock and my heart is broken. I feel that feeding myself and my husband the beautiful food we see here, somehow that may help heal the holes in our hearts. Thanks Chef ♥️

What a great binge watch this has been! So much more enjoyable than what's in the news these days! The first thing I ever made from these videos was the beef stew - my family asks for that frequently. I think I'll do that again and make the cherry dessert for the win!

Chef, this is wonderful! Timing was perfect too. Just that morning as I made my eggs Benedict using a store-bought packet for the hollandaise sauce I decided I would go to your channel to learn how to make it from scratch. So easy! I love how your channel has the recipes in playlists by main ingredient and the essentials - which is where everyone should start! Thank you for upping my cooking game! This "best of" video is great too because it has so many of the little nuggets in it!

I absolutely LOVE Chef Jean-Pierre! He is never boring, and I learn so many things just listening to him while he is cooking. I wish I had his kitchen! One question though - are there two show kitchens? Unless somehow things were superimposed, or I've had too much wine before watchingt Much admiration and respect for this man!

Do you prefer the electric or propane gas kitchen? Me I prefer gas but most rental places where I live are electric. Prefer gas because when you lower heat it is immediate.
