So I customized this with your other mutton curry recipe. 1. I added half a tomato, some salt and mustard oil when making chilli paste. 2. I cooked until paste and dahi became jammy and then transferred it to cooker. 3 whistles and hey presto. This really overcame some of the inherent problems of this recipe

Quick update for you Ranveer, Mathania does not grow chillies anymore due to lack of water. I was in that area and went there to find out. You do get other red chillies which are also good. Locally grown Dhaniya and Jeera are of very good quality.

This is one of the best recipes for Lal maas on youtube. The most important part of making Lal maas is that the mutton needs to cook to almost 50% just with the mathania chillies. The caramalization of the mathania chilly along with mutton is what brings about the authentic flavour of Lal maas!! And that's what he did. He added curd along with other masale only after the mutton was cooked up to 50% just with chillies. Many other recipes on KZbin tell to marinate mutton with red chilly paste, dahi, masale, etc. That dish is also tasty but thats more of normal mutton curry and does not bring that original flavour of laal maas!!

Mostly Whole Mathania chilli is used to make paste and then it is used. Paste given much better results compared to Mathania chilli powder. You can get original Mathania chilli whole from Shirish masala,Availible on all major ecommerce pkatforms.

I am from Bangladesh. Wanted to learn chicken recipes from different parts of India. For some reason the name Rajasthan is constantly appearing in my mind. So started my journey with Rajasthan recipe. This landed on search. Few seconds of watching and I subscribed. I didn't look at the number of subscribers at all. The way this person speaks and his expressions is exceptional. I don't understand Hindi that well but because of the expressions I was able to connect fully with him. I hope to learn a few great recipes from this channel.
