The first time I enjoyed Laal Maas was at a restaurant in Mount Abu, Rajasthan. I was bowled over. Off and on, I've been making Laal Maas, with great results. Your recipe is bang-on.

Suggestions : if you add papaya juice in marrination you can cook it with 4 to 5 whistle and if you dont want spicy then soak the red chillies overnight in warm water and take out the seeds and then make paste.

I have cooked laal maas with authentic mathania mirch and trust me it has very distinct flavour than kashmiri mirch. It just has magical sweet hot taste.. strongly recommend to use mathania mirch instead of Kashmiri mirch

Firstly kudos to this young chef...why is he crediting Sanjeev Kapoor...is it his recipe...secondly never have managed to grind red chillies to the texture he has...maybe i do not have the right appliance for it....substituted with two table spoons of deghi mirch and worked it into a paste of above consistency...worked just fine..maybe a tang spicier than i figured....could not get exact quantities of ingredients...went with my gut...and later read the damn quantities as a write up in this video...😅

Here in Rajasthan we cook laal maas with mathania red chilli not with Kashmiri chilli, and without pressure cooker. And your way to cook laal maas is little different from ours.

I tried this recipe.. it tasted good but the gravy was very.. umm.. it was very thin.. and I didn't get the red colour this dish has.. anything we can do to rectify it?

surbhi talwar i keep making it and i follow this recipe only. For the deep red color, use lots of Kashmiri red chillies for paste, and use kashmiri red chilli powder wherever you put chilly powder. The "kashmiri" gives the color to recipe without increasing too much of spice

use mathaniya whole red chillies in Lal mass , Kashmiri red chillies are not used in this dish...more over coriander powder, turmeric powder. are also not used

The quality of the chilli can change the colour. Once I made it and it was bright red. I made it again, but the chilli paste was brown because the chillies themselves were not as good as the first ones. They had a nicer flavour, but a worse colour.

maybe your onion quantity was less, which resulted in difference in thickness of gravy (though it should not alter the taste IMO). You can thicken it at later stage by adding a very little amount of corn flour or maeda to it and boiling it down.... that should do...

Awesome presentation, COOKING Style and Ingredients are never fixed to ONE THING....they change according to place due to availability of species nearby, so don't tell that this is wrong and this is correct ingrediant...the main point is the OVERALL PROCESS of cooking and The major species that goes in, rest we can modify according to our choice.
