Thank you for this video. I really appreciate the breakdown and depth of explanation. I find it very helpful with understanding the variation for simple to complex dishes. I think it also helps to appreciate the artisan aspect of preparing food. I do not have Chinese heritage but I love something about the diversity and culture of Chinese cuisine. Looking forward to future videos.

The sound of cabbage being ripped or chopped is one of the most satisfying sounds you'll even get.
I tend to think I can cook half decently at an intermediate level, but chef wang absolutely steamrolls any skill I may have everty time this man uploads a video. What an amazing chef
this is the first video I've seen where I could actually *see* the wok breathe! what a revelation!!! it actually inhales at the end of making the Sichuan cabbage dish and the wok fills up with smoke and fire. WOW.
I had to slow this down to .75 even though I am very good at Mandarin. Hahaha. 谢谢你王师傅!我们亚美尼亚人爱你!辛苦你了!🙏

I feel that the cabbages you could buy in Germany are mostly harder than the Chinese ones in this video, probably need to cook longer
@natviolen40213 жыл бұрын
@@hangcui3272 The round ones definitely are denser. The flat ones I have never seen in Germany, but the pointed ones called Spitzkohl seem to be the same as the Chinese, tender and crispy. Maybe you should look for those. They are my favourite cabbage.

@@natviolen4021 OK thanks for your advice. I just once bought a Weißkohl and found it super hard... Almost failed to cut it😂 somehow I always thought Spitzkohl was only for making Sauerkraut, but I will try it in Chinese dish next time 👍

Fun fact, Chinakohl is know in China as the common Weißkohl while Weißkohl in China is sometimes called Europakohl (or more precisely Ausländischeskohl)

Him: Chef Wang plates yet another cabbage dish after 20 seconds of cooking on his jet engine burner! Me: Watching the 6th cabbage recipe of Wang, while waiting for my wok to heat up on a home stove :(
@angelad.89443 жыл бұрын
But fascinating all the same I think. He just cuts out all the prep part for the sake of the video. True, we do not have the burner but I think we can all come close to the finished product. Enough to get an idea of the authentic dish hopefully.
