In our country Indonesia. When we cook pineaple fried rice, usually we add some cumin or curry powder to make it more delicious. And put it a little butter to make fragrant aroma fried rice. Nice to see this video.

Hello Chef Wang. Four things to note about pineapple that all go to using it to the fullest. 1) Bromelain, this enzyme is in pineapple and it breaks down meat cell walls, good as a tenderizer I would imagine with a chewy (snail) or old (ox) animal to be a good cooking partner. 2) Fiber, the pineapple core is full of it and it is very fine and causes the same kinds of issues as cactus glochids or glass wool. 3) Pineapple juice comes from the whole pineapple, all the non-leaf off cuts can be juiced if the juice is filtered after making (again with the fiber). 4) Pineapple can be fermented to an alcoholic drink AND further allowed to vinegar either of which works in cooking and the fermenting works on all parts so the waste cut off is the parts to use (again needing to filter the resultant liquid).

thanks for the information, but these seems to be hints about going creative and utilizing pineapples in fine dinning, which tbh...doesn't seem to be what Chef Wang is good at. In this dish I think Chef Wang is just using pineapple as sour and sweet seasoning, as how it is used in Hawaiian Pizza. note that soaking pineapple in salt water is a way to break down bromelain, a way to remove the unpleasant feeling caused by it.

@@Kizumi421 Thank you for the kind reply. I was responding to what he said at 58 seconds in that the middle is too much of a waste. I agree that pineapple can appear to be a waste heavy fruit and finding more than just the one use is always good.

菠蘿切的時候先去頭尾然後再削皮,因為去頭尾後看的到肉跟皮的交界,這樣削皮比較不會削過頭....

@@mephren It is not a big difference, because the dialects of central and northern China are only limited to accents, and only some of the dialects of southern regions are considered a special branch of Chinese.
i clean the pineapple like i would a melon. take the top off and bottom off. cut the sides off from top to bottom. I go just deep enough to remove the hard skin. Then I can get nice slices to do a dice or whatever else I want. If you grill the core long enough. it can actually get tender to eat, but sometimes I chew on it like i would sugar cane.
