I love all your recipes .. i fall so in love . My boyfriend is cuban but he is living in USA and im here in Germany . Always when im in the USA i don't eat American food.. no always cuban food . You can definitely do it that way. I find that you run the risk of it coming out gamey that way so I like to add some garlic and sour orange to help that

Hi! I just found your channel and I am so happy I can't even tell you. I lived in Miami for 7 years in a Cuban household and I fell in love with the culture but especially the food. I did have one question for you, though. In the household I was in they used olive oil for everything, especially mojo. Is there a reason you use a different oil or is that just a personal preference? Keep being awesome! Thanks.

You generally do not want to use olive oil for frying as it has the lowest smoke point of all the cooking oils and will smoke and burn easily. Olive oil is for eating fresh. Vegetable oils are for frying.

I marinate my pork the exact same way but I put ham seasoning in it and I fry it in Bacon fat from the morning which is basically the same thing as lard and it comes out tasting like bacon that's also how I fried pork skins

Thank you!!! You can adobo if you like! I rarely use adobo because I usually make my own or use Kosher Salt or Pink Himalayan Salt. Any of these will do. With this dish, the garlic, sour oranges, and oregano are so bold that you gives the dish so much flavor which is why regular salt worked just fine. But again, you can use whatever you have on hand.
