"Who" is always somewhat unimportant when it comes to considering the invention of food-stuffs, as there is literally no way of knowing who was the first to actually do it - in most cases, the closest you'll get is "who was the first to record this thing," which obviously isn't the same. Similarly, "why" is also the wrong question - people do things because they want to or because they think it'll be useful, that's it, end of story. If anything, "when" may be a better question to ask. Moreover, Jerma - like many people - seems to have a very limited understanding of the structure/day-to-day lives of early humans, as life was not this incredibly fast-paced thing that only involved the acquisition and consumption of food. The earliest hunter-gatherers still had free time (I mean, hell, modern apes and monkeys have free time), and used this time for all sorts of things that we might consider "unnecessary" for immediate survival. Also, humans have literally always cared about taste, as it tells us what we should and shouldn't eat while also allowing us to be selective about the nutrients we consume - being "picky" about what you ate is what kept you alive. Back to the sauce question. Let's say that for something to be considered a sauce, it must contain - at the very least - a liquid, some sort of thickening agent, and flavorings (e.g. herbs, spices, seasonings, meat fat, etc.). Liquid is the easiest to come by and the first sauce probably used water as a base, or potentially the juices from cooked meat (the latter of which also provides the third component, flavoring, in the form of animal fat). But what about thickening agents? Even today, the most popular thickening agent is wheat flour - and archaeological evidence supports the notion that wheat flour has been around since at least 6,000 BCE. Wheat flour, however, isn't the only type of flour - oats can also be ground into flour, and archaeological evidence from the Early Gravettian Grotta Paglicci site in Italy shows that early people were grinding oats into flour since at least 32,000 BP/32,000 years ago. As long as these peoples were able to form some sort of crude bowl, be it out of clay, stone, or some other substance, they'd have a vessel that could hold our liquid and oat-flour mixture. If they were using the juices from cooked meat (which is likely seeing as meat was the primary foodstuff during this period due to colder temperatures), adding oat flour would make gravy - which is technically considered a sauce. Ergo, sauce may have been around for 32,000 - 30,000 years. For the sake of this argument, we will ignore the fact that au jus - which is literally just meat juice and fat drippings - is also considered a light sauce. Anyway, anthropology rant over.

As completely correct as all this is, I think your best intentions are getting in the way of the bigger picture: Why don't we get Jerma a show where he travels around the world looking for the first sauce guy like "Ancient Aliens" meets "An Idiot Abroad?" We'll have him travel the world meeting every kind of weirdo with a wild, exciting, and different story where they all insist they know the first guy who made sauce, all while he pieces together an increasingly more bizarre hypothesis based on these experiences. Then, as the finale, we get him to visit you, who will explain the matter based on actual anthropology, crushing his child-like grasp of the issue that had been nurtured throughout the series. It's a much more work intensive and expensive way of gaslighting him than how it's done now, but he won't be streaming forever and lets face it the History Channel is probably desperate for relevant content.

Also the whole "who" in question seems wrong i don't think you can pinpoint that on one group of people much less one person, i would think humans just do these things because it's a thing that humans do when there's resources and time to do it, such as festivals, bazaars and pots But also Wikipedia says its the Chinese "Possibly the oldest recorded European sauce is garum, the fish sauce used by the Ancient Romans, while doubanjiang, the Chinese soy bean paste is mentioned in Rites of Zhou in the 3rd century BC." So I'd say that humans start making sauces around "city / village" level civilization. Also the "why" that he seems to be hung up on is strange "why anything" "why not" the sauce made the food better and that made life better so they made the sauce and then ate it But idk i might be spreading idiocy or misinformation or pseudo-intellectualism so just ask an expert maybe?

Food is one of the oldest enjoyable things in life so it only makes sense that someone would try putting liquid food on normal food to make nicer food I was also thinking village-level since by that point you'd have dedicated people doing their things and a mild surplus. that ancient roman fish sauce, garum was big business. Coastal cities had factories that would be producing and then sending jars of it all across the roman empire. the best garum would fetch very high prices. all classes enjoyed some aspect of it, they took fish intestines, salted them, and stewed it into a sauce. the liquid product was jarred, and depending on where it was produced, it was considered more or less valuable, suitable for middle class or rich. the left over salted intestines would be sold cheaply to the poor, who would flavor porridge like foods with it. pretty neat stuff, i doubt it was the first sauce though. there's the possibility of another fish sauce before it called garos, but it could also just be the name of a fish of that era.

I like how Jerma makes up this convoluted philosophical scenario about the first sauce, when really it was likely just some caveman that cooked a piece of meat with like a wild onion and put the liquid left over over his mushrooms. And the pickiness always existed. Humans have always had some kind of preference and some kind of sense for what nutrients they were missing and then instinctively craved those nutrients. Because our foods are severely processed and shit we don't get it that much anymore, but studies have still shown that gut bacteria can cause cravings in the carrier human depending on the type of bacteria you have (which depends on what you've eaten previously). If humans were just unmotivated "I eat whatever I can ,I don't care". We would've never evolved anywhere near to this point. We have millennia of culinary history and it's not that we developed the sense recently, we just started having more resources and writing stuff down to be able to make *and document* culinary developments.

To actually answer Jerma’s sauce conundrum, cuisine was able to really develop after the Neolithic revolution (though believe it or not there is actually evidence of multi step recipes by hunter gatherers over 30,000 years ago (Lippi et Al 2015). This was in large part due to division of labor and our opportunist diets. It would make sense to bring all the food sources together into a larger meal to better distribute the nutrition.) Farming really allowed for a surplus of food and for permanent settlements to develop. This allow for more experimentation with cuisine to happen. A lot of recipes stared off out of convenience to try and get the proper macronutrients, but the creation of a more complex social hierarchy also made specific foods coveted as a status symbol.

I think sauce may have come from soup. Soup is dead easy to make, just plant and meat in hot water. And they ate the soup with some other food like meat or vegatables roasted over fire. And someone thought "This soup tastes good with this other food." Over time, they make it thicker if the soup is too thin to put on top of the meat/vegatable, and this turns into sauce.

Cavemen definitely made the first sauce. And they had a great reason. Older people and young children would have the strength in their teeth to be able to chew tough meats and vegetables, so mashing foods together into something like a sauce would have been inevitable.

the first "sauce" wouldve been during cave man times. people wouldve figured that mushing berries onto food made it taste better. modern monkey's dunk their foods into the sea to make them salty, there is no way ancient humans didnt mash berries and stuff into their foods to improve taste

*I've narrowed the invention of sauce down to one person: Pepe Saucevia, and i'm going to get to the bottom of this. this name keeps comin' up over and over and over again. Every day Pepe's mail's getting sent back to me. Pepe Sauceia, Pepe Sauceia, I look in the mail, this whole box is Pepe Sauceia! So I say to myself I gotta find this guy. I gotta go up to his kitchen, I gotta put his mail in the guy's goddamn hands! Otherwise he's never gonna get it, it's gonna keep coming back down here. So I go up to Pepe's kitchen and what do I find out, Mac, what do I find out? There is no Pepe Sauceia. The man does not exist, okay? So I decided, ohh shit, buddy, I gotta dig a little deeper. There's no Pepe Sauceia, you gotta be kidding me, I got boxes full of Pepe! All right, so I start marching my way down to Carol in sauce H.R. and I knock on her door and I say, "Caaarol, Caaarol! I gotta talk to you about Pepe!" And when I open the door, what do I find? There's not a single goddamn tomato in that kitchen. There is no Carol in sauce H.R. Mac, half the employees in this building have been made up. This kitchen is a goddamn ghost town.*
