Ever since I saw you add that paste, I do it too and it makes such a difference! It's perfected my kapoon recipe. Gives it so much more flavor. I also add a couple tbsp of tom yum paste for a little pop.

Looks good one thing i learn for the noodle is you can just boil hot water turn off and let noodle soak in there cover it and just stir check on it after few mins or so then it soften up and you dont need to keep the heat on and stand there to stir it lol

I'm surprised this dish isn't as well known as pho and ramen. My mom's made this throughout my whole life and I love it tons more than pho actually. Ofc all three are great. Pho is your beef broth, Ramen is the pork broth, and Khaub Poob is your chicken broth. The big ol three noodle dishes.

This looks like an amazing recipe...I'm familiar with the ground pork and pork skin version of khao poon as that's what my mom sold in Laos, but your version looks pretty neat. Will definitely do it, but toss in a ton of garlic chili oil to give it that nice vibrant color. :) I wasn't familiar with kachai but someone asked below and you said it's in between ginger and galangal, which is helpful. Thanks for sharing!

It's kind of hard to explain. To me, it works just like ginger and galangal. Flavor is in between those two.

No I do them by hand. Food processor is a great investment for baking and or chopping vegetables though. It's up to you. :)
