The fried version break down the noodles but depends on personal preference. I made my sauce ahead of time -that way the noodles won’t get hard and stick together.

Mmmm, one of my favorite dish. I usually add the garlic into the sauce before mixed. I'd never use shallots. Will try shallots next time.

Th ks for given Lao credit...I see lots of dish Thats are Lao. Dish ..but when food become popular..people want to claim as there own.dont give Lao credit..I saw lots of Lao people share alot of the secret recipe.on u tube...like the Thai they call it Pad ThAi..but same versions...just add peanut and Lemon become there version..but its the same style as Lao..

Oh interesting that it’s a Lao dish! I never heard of or didn’t know friends/family making this dish. I made up my own version and basically used the same sauce ingredients but the fried version. LOL Thanks for sharing and will try your version.

I made some without fish sauce. And instead of oyster, hoison sauce. Because someone is slightly allergic to shellfish. 🙃 It tasted not so bad. But I love my oyster sauce. 😆

U literally make it like my mom does.. she adds the oil to the plain noodles first.. then adds the sauce..
