The non stronger rook is almost exactly the same as the bishop. I also made a triangle chess version, and in it, the bishop is very weird, making a squiggly line to stay on its color.

Weak rook and bishop here are dual to each other - one can undo each other's moves when they can't do that themselves.

You don't need three coordinates. Pick one diagonal, then count triangles along it. If you rotate the board 60 degrees then it becomes obvious. I would consider getting rid of the weaker rook and allowing bishops to go in six directions.

Your Triangel Chess version is definitly better than the Green Lemon games version as yours is more symetrical. I look forward until I hopefully will be able to find someone who plays this Chess Variant with me. So I'll only use your game, thanks. The Bishop new skin thing and then just using a crude drawing was a nice parody against all overpriced DLC software developers. But I wonder if it would make sense to combine Knight and Unicorn into a stronger Knight as both the moves are somewhat knight-like, so this would be similar logic like with stronger rook.

Something you could’ve done for the knight is not go with the L thing but with the 2moves one direction 1 move on the opposite (like 2 down 1 right) which would make the knight more/less powerful depending on if it’s moves are based on the normal rook or big rook

Triangle grids still only need 2 coordinates. You can try Ranks and Files, except instead of diagonal files, they're just the vertical rook moves from the 13 bottommost green tiles on the board.

1:14 The way you initially defined its movement, it already moves in straight lines. Its trajectory has no curve whatsoever. This is arguably as opposed to the movement shown at 1:12, assuming the pieces always go to the center of any cell they pass through or end up on, because then the paths shown would be zigzags with 120 degree bends.

Interestingly, the bishop and rook moves are not symmetrical - i.e. they can't always just go back to where they came from (that's only possible if they changed color). The bishop can even get stuck in the corner (e.g. at 0:54 the top one). Horsey and Unicorn are symmetric (as are the strong rooks). (Horsey can't reach all locations - the corner pieces are not reachable, I think.) The strong queen can undo her bishop moves only when changing color, but can always undo her strong rook moves.

It's hard to make chess variants with regular pentagons or regular octagons, since you can't tile the plane (form a kitchen floor pattern) with them. You can introduce other tile shapes, or you can make the shapes irregular, or you can have the variant take place in 3D space, like on the cells of a soccer ball or something.
