The important thing to mention is you can also play like e6, d6, g6, Bg7, 0-0 and e5 and setup some kind of kings indian defense. That's how I reacted to this 3. Nf3 in the past and I think it's pretty sharp.

One more interesting and relevant video! I understand it as a demanding homework for the coming days to study. Do you think some practical knowledge of dancing Argentine tango will help me in these studies?

I really like these side lines (especially in the second part). In "standard theory", the main idea after "1.d4 Nf6 2.c4 Nc6" (in the main line which you haven't covered yet) is going "d6", trading on c3, and pushing e5. So I think it's interesting how you point out that in this sideline this typical idea is actually not that good. (@11:15). I wonder..do you not like this idea in general, or is there something about them moving on e3 that prevents this idea from being good?

Trading on c3 , and pushing e5 is a prefectly reasonable, and fully playable line.
