Actually it's not overcooked it's burned. This happens when you fry it on open flame or on very hot temperature. So inside is still raw, while outside gets burned. This coaled, black mass is carcinogenic and very dangerous for health.

+Peter Tollan the more caramelization, the more flavor. it might look like it would taste bad with that much char but on a steak like that, it REALLY tastes good
