Fun pizza making tip- the corn meal isn't for flavor or texture per say, the intention is to keep the dough from sticking to the counter and pizza peel by creating surface area under the dough to keep it technically suspended from the flat surface by thousands of little corn meals.

I lived in the Chicago area for about 1.5 years and the only deep dish I liked was Lou Malnati's Chicago Classic. It's much better than Uno and some of the other local chains that served deep dish. The crust was buttery and crisp. I never had a chance to try Pequod's deep dish when I was there, but heard it's the best. Overall, tavern style was the most popular from my experience.

Pequod's is basically detroit style pizza in a circle pan. It's not a true deep dish pizza. Owners themselves call it a pan pizza not deep dish. Not sure when it started people calling Pequod's is deep dish.

From Chicago and tavern is first but definitely Lou's for the deep pie. We do Lou's on Xmas Eve every year, the crust is so boss. It is thinner than perceived. It's more like a thin L shaped side profile crust, crispy and buttery deliciousness.

The original UNOs location in Chicago is the only location that still has the original name. The original owners franchised the name out, and then sold off the whole thing except the original location, letting them keep UNO’s in the name but changing the name slightly. Thus Pizzeria UNO vs UNO Pizza.

Love tavern style pizza. Reminiscent of a Maryland pizza style, cavalier pizza except Maryland pizza is a rectangle and uses a sweet sauce and smoked provolone cheese. Gentleman Jim's pizza is a must try, but Ledo's (real name, Ledo Pizza) pizza put Maryland style pizza on the map.

Half of my family is from Chi-town. I'll even say it. It's a pie. I think it will get more respect if it's categorized as a pie. It's a damn fine dish, but I don't know if I would call it a pizza. As a lifelong NY'er, I hate the argument about "what pizza is better?". It's two totally different styles, and both are bomb. The north east in general (including PA) and most of the midwest has fire pizza. That being said...I've NEVER had good pizza out west. Especially California. Gun to my head, North Jersey has the best pizza. But I'll never admit that in person.
