Dark Soy is used mainly for colouring and added towards the end of a dish and Light Soy has more flavour and is used for sauces and seasoning

I dont think its a chow mein without the bamboo shoots. It still looks ok as a stir fry though. I think you could have cut the chicken into smaller chunks to cook faster also.

Hello everybody! Welcome! Now! Oh yesssss!! Great fakeaway as usual Keith, but for me, a chow mein without beansprouts, is like a roast beef dinner without Yorkshire pudding! I love the contrast between the soft noodles, and crispy beansprouts.. Did you know that most Chinese takeaways cut their chicken fairly thin, and blanch/ boil it, for literally less than 1 minute.. they also add salt, white pepper and MSG in practically all their dishes.. I know you bought some MSG too, so kinda surprised you didn't use it!! Anyway, great recipe nonetheless, looked very tasty.. My Kids love chicken breast, thinly sliced, miked with a little oil and soy sauce , and pan fried for around 2 to 3 minutes.. Soy sauce is a wonderful aid in cooking.. Another idea for a theme night, to go along with your fakeaway Wednesday is maybe do a "Dish around the world" night, going through the alphabet, and cooking a dish from that particular Country, so, say "A" might be Argentina, so you'd make something like Carbonada or Empanadas for example!! Just an idea
