This style was shown to me by the chef in my local takeaway..Veg should be cooked separately from the noodles..The chow Mein will have more of a crunch using this method..Soya sauce should not adhere to the veg but only slightly also it makes for a more colourful dish.This is shown in the tutorial.Nothing worse than a soggy chow mein....Full written recipe will be available later..
Ingredients
1 cooked chicken breast cut into small pieces
Half green bell pepper
1 medium sized onion
2 spring onions
Handful of beansprouts
200 grams pre cooked noodles
Method
Heat some vegetable oil in your wok and add your green pepper and onions
Cook for one minute.. Add some Shaoxing wine to help ignite the wok and then add your beansprouts
Cook for a few seconds and then remove from the wok and set aside
Next add your pre cooked noodles in some oil and add
1 tablespoon of oyster sauce
2 tablespoons of light soya sauce
3 tablespoons of dark soya sauce
1 tsp of seseme oil
Pinch of MSG sugar and white pepper

Add your spring onions and return your pre cooked veg to the pan
Cook for 1 minute and then set aside
Next add a few tablespoon of vegetable oil to the wok and add your pre cooked chicken
Add one teaspoon of oyster sauce
1 tsp of takeaway oil
1 tsp of light soya sauce
2 tablespoons of dark soya sauce
Pinch of MSG sugar and white pepper
2 tablespoons of water
Add some cornstarch to thicken ..Done
Place the chicken on top of the chow mein..Done
