As a teen our neighbour was slightly above peer to my family but we were all cool. Us kids were playing at their house one night and he had decided to make this for the first time, and we were the perfect captive critics. In my kid brain it was: The fanciest food I'd ever heard of, most elegant I'd seen, richest I'd tasted, but the kicker was he made a whole plate just for each of us kids, and that fucked me up. I remembered it all so vividly recently, a scant ⅐ century later, and realised Yeah I'd do better.

It was my mom’s favorite fancy dish to make when company was coming over. She had a white wine sauce that you could pour over it too. Very good. I think it was one of the first meals that I cooked for my first real boyfriend!

I recently made my own spin on this... 1lb butterflied, hammered chicken breast, layer of shredded sharp white cheddar, layer of spinach filling (spinach, herbs, eggs, parmesan, breadcrumbs), wrapped in 1lb low sodium bacon. Maybe at some point I can learn to make videos as nice as yours and share some recipies!

Your recipe sounds delicious. I might try a version if this as I make a god quart and of seasoned spinach (or spinach and okra) every week) The bacon wrapping would keep the chicken breast moist. Did you do breadcrumbs on top of the bacon? Did you fry it? Bake it? Both?

@@cheshirecat7132 Thank you! No breadcrumbs on the bacon. I make spinach bites that my daughter has always loved with the spinach filling described above (the breadcrumbs in it are just a couple tablespoons to help soak up liquid & make the mixture easier to roll into little balls) that I double bread (with some parmesan in the breadcrumb coating) and fry. Anyway, I had some of that spinach filling. After butterflying & pounding out the chicken (which was a giant, 1lb breast), adding the layer of shredded cheese and the fat layer of spinach filling, I folded it back over, then used the lb of low sodium bacon to fully wrap the whole thing. Then I set a wire rack onto a parchment lined tray and baked it till the bacon was crispy. Pretty sure I had opted for 350° oven, but can't recall how long it took.

broooo this recipe looks fire! I've only made chicken cordon bleu once, (in panko crums, and baked) and it was so good! This way looks dope! Next time you make it, during the chilling/frying/baking process try whipping up some Colcannon (irish potatos), combo is fantastic!
