Ingredients
Chicken - 3-3 1/2 lbs
Taro - 1 1/2 lbs
Coconut juice - 3 cup or 2 cans (Coco Rico soda brand)
Coconut cream - 2 cup or 1 can (savoy brand)
Milk - 1 cup
Water - 3 cup
Garlic - 1 whole bulb
Shallot - 1 large
White onion - 1 large
Lemon grass - 3 stalks
Lemon grass chop - 1 stalk
Chili pepper - 2
Curry powder - 3 tbsp
Annatto - 1 tsp
Cooking oil - 1 1/2 tbsp
Cooking oil - to use for frying the taro/chicken
Salt - 1.5 tbsp
Sugar - 4.5 tbsp
Fish sauce - 2.5 tbsp
Seasoning powder - 1 tbsp
***only use half the seasonings to marinate the chicken. Save the other half to season the soup. When seasoning the soup, add a little at a time, taste test, and add more if needed to your liking.
