Chicken Curry Recipe saute' with Onions and ginger garlic paste along with green chili's and tempered with condiments finally tossed with sweet Coconunt Milk and a sour Tamarind paste
Ingredients (thanks to Andy O'Meara)
sauté:
1/2 tsp mustard seeds
3-6 red chilis
1-2 bay leaves
1" cinnamon stick
1c diced onions
1-2 dozen curry leaves
add later (as paste):
3-6 cloves garlic
2" ginger
green chilis (to taste)
1-2tsp salt
after garlic/ginger rawness gone:
reduce flame:
1tsp coriander power
1tsp red chili powder
1/2tsp garam masala
(1-2 mins later)
1 can coconut milk
add raw chicken cubes (if that's your thing)
salt to taste
(simmer with lid for ~15 mins)
1/8-1/4c tamarind juice (to taste) -- always add the very end
garnish with coriander leaves if possible

So delicious!! I have made this but I browned the chicken in the spices prior to adding the coconut milk. I also added plain greek yogurt along with the coconut milk. It thickens it nicely and it is yummy to eat with Naan bread :)

I made this just now. I didn't add mustard seeds and green chillies. I used 1 dried red chilli. I blended onion, ginger and garlic in the blender and sautéed it. Rest of the recipe was same. This was very delicious and easy to make. Thank you chef.

Followed this recipe step by step and it turned out delicious. Very easy recipe. I was worried that the coconut milk will make the curry too sweet, but the tamarind juice at the end neutralizes the taste of coconut and you get a tasty curry in the end with the proper amount coconut taste in it.

booshaboo1 Yea sounds too involved, I like my version; coconut milk, onion,garlic,ginger,tomatoes,green pepper,red pepper flakes,hot curry powder,chicken - I have most every spice in powder form just in case I'm lazy or didn't use enough to begin with. for the white rice just barely cover with water, boil for 5 min turn off heat and cover - 15+ min later you have some aldente rice. It's good enough for the boss. Cheers!

My goodness you are an amazing chef. I came back from work and my world best husband cook the dinner and for the first time he tried something different and tried ur recipe. I have to say I love my husband for doing that because this was the damn delicious curry I had in long time. I live abroad and crave for authentic food and if I get this at my home by watching your recipes I will be Happy. Thanks ALOT.

Awesome! Thank You! I'm off to the store to get some ginger and make this lovely dinner! Although I don't think they have any curry leaves at the store. Will it be ok to add a bit of cilantro leaves while sauteing the onions...and again the last 4 minutes?

Shalini Fernandes in Fiji we use the coconut milk for any sea food because it nourishes and blends the taste of sea water with organic particles together giving a perfect taste. Please don't use mutton use fish instead and I promise it won't disappoint you.

The first time I tried your recipe, it came out pretty good[step by step] I remastered the recipe couple of times, as cooking the chicken first in it's own juice and then add coconut milk, cook til it boils down to your preferred thickness and finish the process by topping cilantro and let it stay covered for the aroma to settle and mix in. I rather not add any tamarind or lemon juice in it as not everyone cares for it... rather keep lemon wedges on the side.

Super good, unfortunately I had to apply some variations due to the unavailability of some ingredients.... 1) In Italy no fresh curry leaves so.... 1 tsp of curry powder 2) I had to scale down the chilis to 3 very small dry chilli or, for us, is tooooo hot. 3) Green pepper indian style not available so I used 1/2 mid-size green pepperoni 4) Before adding the chicken I blended all the souce so it was really creamy when started to cook the chicken and avoided to found bay leaves ot chilies 5) Tamarind juice is impossible to do here so I had to avoid it (I hope to taste it sooner or later with the juice) but it taste nicely too. To cope with acidity I added 125g of greek yogurt while marinate and then used the whole marination in the cooking keeping down the tangy and/or sour taste. The recipe is SUPER, all my friends got crazy for it. Thanks Guru.....

+JustAVoice yes Michele is talking about powdered curry leaves they don't taste as gud as fresh curry leaves but are a good substitute

+JustAVoice - I've been tens of times in India, mostly for work purposes, and I got crazy for Indian cuisine that I'd like to reproduce in my country. Unfortunately Italy has a mediterranean clima and some of the best Indian spices can't be grown..... so, what to do? We must use what we can find in supermarkets (and sometime difficult to find too) even if my closest Indian friend sends me spices regularly from Munnar region I can't get fresh ones as leaves (forbidden to import live stuff)... But the results of the SUPER CHICKEN CURRY IN COCONUT MILK taught by Gurjit is not bad at all even if, eaten in India using the REAL SPICES, has a definitely different taste. What I really appreciate from Guru are the ANSWERS to these posts, it really means that he CARES about his fans and "students".

Yasmine H. Try pomegranate molases, one or two Tbsp.Pomegranate molases can be found in Iranian and Arab stores.

+p mastro you meant lemon juice instead of tamarind juice, well not a bad idea, but it's better if you can use kokum though i believe that wouldn't be available as well if your not from southern part of India

Paolo M curry powder wouldn't dissolve and it would show up on your tounge when you taste the dish, making it an awful experience, so i would recommend you to use fresh curry leaves, they would offer a better aroma and taste at the same time, and can be discarded easily while consuming the chicken curry with rice

Hanaa Farid scrape the coconut and extract the milk from it using a food strainer, I believe coconuts are free where you live. That's a simple way instead of buying from the supermarket!

indians usually add coconut milk only to fish, but i experimented by adding it with chicken, tasted awesome, so you could very well say it's a thai variation here's the fish version of it Fish Curry In Coconut Milk (with Tip to Remove Smell)

Actually it depends on what part of india you live in. India has distinctly 3-4 cusines . Coconut is used in southern parts/ coastal areas due to availability of fresh coconut. Most of what is avaible in western restaurants is only one type of cuisine , The northern one ( Mughalai) In malabar (southwest coast of india) of karnataka , we use coconut in almost all types of curries. chicken ,fish , shrimp , veggies.

What can I substitute for the Tamarind paste? I don't have it and haven't seen it in the market. I'm worried to use lime or lemon to curdle the milk.

OR... you can do as I have found, by far the equivalent of restaurant quality curry, just buy 1-3 bottles of masala ( butter chicken, chicken tikka masala, etc) warm in wok or other vessel, add onions to taste, maybe some Garam masala, then uncooked chicken to cook in masala for about 20 minutes. What is really nice is cook basmati rice, over medium heat, one cup for two servings, with diced onions, bring rice to rice over medium heat, the add 2 cups per each cup rice. Cook over low- medium heat until soft. Then, transfer to wok/vessel w olive oil 1 tbsp, fry to-warm, w or w/o scallion and peas. Add 1-2 whole eggs at medium heat for stir fry rice, a nice touch. I have done all of the scratch recipes suggested here, but I lack the talent to recreate them. I admit freely undeserved accolades for my work.

Two questions: 1) Can I use olive oil instead of vegetable oil? and 2) Can I add potatoes to the curry? Because potatoes take longer to cook so will the curry dry out? Thanks.

In a curry its better to use an oil with a high smoke point (=veg oil). Olive oil has a medium to low smoke point and will in high heats turn to trans fats (unhealthy stuff). you can use potatoes just add then at the beginning. Hope that helped.
