CHICKEN IN A BLANKET (Breaded stuffed chicken drumsticks) is a traditional Vietnamese dish, often seen at festive gatherings, and interestingly, it’s also a great fit for Christmas Eve dinners.
(The traditional version called "No Way Out Chicken" or "No-Escape Chicken", features a whole chicken stuffed with flavorful seasonings, then wrapped in sticky rice and deep-fried until golden and crispy. Preparing it requires time and skill to ensure the chicken is evenly cooked-crispy outside and juicy inside).
Today, I’m making a mini version of this dish (I'd like to call this "Chicken in A Blanket) that’s quick, easy and perfect for individual servings while still being absolutely delicious.
I’ll share my mom’s secret as well, to achieving a perfect sticky rice coating: not too thin, not too thick, crispy yet sticky, airy, fragrant, and never become too hard after frying.
INGREDIENTS:
FOR THE BLANKET:
500gr of Thai sticky rice (not sushi rice).
100gr of peeled split mung bean.
250gr of sweet potato.
Breadcrumbs.
FOR THE CHICKEN:
1kg drumsticks.
200g carrot.
15g dry wood ear mushroom.
15g dry shiitake.
20g fresh ginger.
Onion.
Shallot.
Spring onion.
3 lemon leaves.
SPICES LIST:
2 tsp of salt.
2 tsp of pepper.
2 tsp of paprika.
2 tsp of five-spice powder.
2 tbsp of turmeric powder.
2 tbsp of soy sauce.
We also need salt and vinegar to clean the drumstick.
"Chicken in a blanket" is an ideal dish, not only for cozy gathering, but also for festive. My whole family loves this dish, from the elderly to the little ones.
