Chicken Karage Recipe Ingredients 1 chicken, deboned and cut into chunks ¼ cup potato starch ¼ cup AP flour 2 tbsp light soy sauce ½ tsp kosher salt black pepper 2 tbsp sake or mirin pinch of salt to season once the chicken is out of the oil Oil to fry Japanese mayonnaise and lemon for garnish. 1. Marinate the chicken with soy sauce, salt, black pepper, sake. 2. Prepare a heavy duty dutch oven to try the karage. Heat oil on medium high until 170C. 3. Add AP flour and potato starch to the chicken. Massage the chicken so there are no dry spots. 4. Gently drop the coated chicken into the oil. 5. Fry for 4-5 minutes, depending on the size of your chicken until golden brown. 6. Take out on a wired rack. 7. Crank the heat to high, or until the oil is at 180C. 8. Drop the once fried chicken into the hot oil. 9. Fry for 1 minute or less, and take out once golden brown. 10. Season with salt. Serve with Japanese mayonnaise and lemon. Enjoy!

i love this kind of video, I can totally relate. I used to work at restaurants in the US before coming to Korea and would get home at 2am with no dinner sometimes. I would always tell myself "okay just make something quick and go to bed" but I would always end up going all out. It hits different after a long day and then finally eating after an hour of cooking after work. uwu

A tip you may or may not use: Use a wok to deep fry. You get more surface area with less oil, and the tall walls of the wok help reduce oil splatter. easier clean up. learnt this from my grandma a few years ago.
