Makes excellent jerky. Boil it for ten minutes, put in marinade over night and then dehydrate. Good texture and absorbs what ever flavors you use.

Interesting. I've sauteed COTW with peppers and onions and it's merely okay; I felt it would have benefitted from a marinade first. I tried dehydrating some and freezing it, and later put it in the slow cooker withr a roast, but despite simmering for hours it never rehydrated and remained like a crumbly piece of chalk. PS, Normally I would expect to find chicken of the woods frequently on my trail walks but we're in a drought here in Southern New England and there's virtually no fall mushrooms of any kind to be found.
