This is a delicious pie made from a very unusual fungus called Chicken-Of-The-Woods - which really lives up to its name - it's a mushroom, but it has the texture of cooked chicken breast (and a savoury flavour that is quite reminiscent of chicken too)
*(Unfortunately I cannot guarantee the safety of the bacons)

You have pretty great technique as a cook, the only thing I've noticed is that you sometimes don't let your pan come up to temperature before you add the food. It really pays, especially for meats, to allow the pan to come up to temperature before searing/sautéing, it allows for maximum caramelization without risking overcooking as much (spoken as a former professional sous chef/culinary school grad)

true for beef etc., but bacon fat renders at a lower temperature than the meat browns, so good to add it to a colder pan to avoid blobs of unrendered fat, the bacon will brown eventually

Aaand, I'm hungry again..this looks so tasty, and I love both chicken and mushrooms, so this is must-have dish. No wonder this is such a high-valued fungus; considering its texture, it is great to use in dishes that require high temperature/extended cooking time. I can picture this sliced finely, arranged on foil to mantle some kind of, preferably fatty, farce, then steamed like a sausage. It would soak up all the moisture and flavour, while still retaining shape and sturdyness.

Yep - it's a little ceramic thing that holds up the pastry in the middle like a tent, and helps the top crust stay crisp

How British of you to make a pie :-D. I wonder if pasties would be nice? Hopefully I'll find some COW this summer/fall (I live in Ohio USA). I found some last fall but it was a bit old and the flavor was a bit meh. We find a lot of Hen of the Woods/maitake which is the business because it is plentiful and remains prime for a fairly long time.

I love your channel. I was picking Stinging Nettles when my grandmother yells at me "What are doing those can sting you!" and I look all bewildered as she drinks tea made from the damn things. I am all "It is a tea harvest" also Rosehips which make the best jam if you have not had rosehip jam go buy some

I once saw a bit on "this Morning" I think it was, they took a log, drilled half a dozen hols in the end and added dried mushroom spores and as far as I remember a splash ow water. they then planted the log pieces in a shady spot at the bottom of the garden. this would then produce a number of harvests of mushrooms in subsequent years. It might be worth your time attempting to replicate this either through grinding up less select portions of your harvest, or returning to the source log and attempting to harvest some spores by holding a piece of paper below the gills and brushing them with a soft brush. you might need more reaserch as to optimum timing, but I figure it has to be worth a go.

Nathan Brady I might try that with something I can't forage such as shiitake. Although I enjoyed eating chicken of the woods, I might not pick so much of it next time. On reflection, I like my mushrooms to taste of mushrooms. This stuff is sorta weird

Late to the party but you can also fill a food-grade plastic bag with non-evergreen fresh wood chips/shavings, wetting then down a bit as you fill the bag. Tie off and hang the bags in a dark humid spot, then cut a cross into the bags where you can inject spores

Or Vermiculite is a good substrate if using a bag. Rye grain is fantastic for it but you don't want ergot if it goes iffy. Just use boiling water to keep everything sterile and try not to breath on it when your setting up. I've never used a sammich bag though so I don't know about boiling water with those but a drill and a take away tub works well.

@@SombreroPharoah , Vermiculite is a form of heat-processed mica which often contains asbestos. I dont recommend using vermiculite for anything; not for plants and not for attic insulation ! A mine and processing facility in Libby, Montana was embroiled in lawsuits after poisoning much of the townsfolk and thousands of people around the country, causing obstructive pulmonary disease and sometimes mesothelioma (a specific type of lung cancer).

That does look appetising. I bought some Chicken In The Wood spores online for my brother's birthday several years ago, I have no idea if they ever worked for him, forgot all about it. I may have to have our annual chat and see if they ever sprouted. I can't even remember what format they were in, might have been plugs you had to drill into the tree.

Why don't we cultivate those on a large scale??? Should be fairly easy to do since all they need is rotting wood. We cultivate far too few mushrooms in general. There are so many amazing species that I'd love to find in convenience stores. Luckily I get enough of them from the forest but imagine the possibilities for the food industry! It'd probably even be cheaper than growing actual chicken (in acceptable conditions).

This may just be the Australian in me talking, but that ain't no pie A pie NEEDS to be a base with a lid, I'm sorry......... that I'm not sorry Though, I will admit, this and the other vid in this fungi, has made me wanna try it, and I absolutely hate mushroom, I wouldn't make it into a pie (one like this or a proper pie) prolly just fried up with some kind of dipping sauce, or maybe done on the Barbeque, as it is my nation's culture to put EVERYTHING on the BBQ, so mission accomplished, I think

Scott Dally Well it’s considered an English pie. I think a lot of top chefs do the same with their pies (Wolfgang puck only has the top crust for his Shepard’s pies

I don't like washing mushrooms in general - it's mostly a personal preference; if it's dirty enough to require washing, it's probably not worth eating

Generally you don't wash mushrooms because they absorb the water too quickly and go all nasty

Mixed broad leaf woodland. Oak, beech, sweet chestnut typically.

It's possible. It's worth looking for them earlier in the year than other mushrooms - they are a spring/summer thing mostly

I have so many questions: Why did we not get to see black and white animals eating when you dug in? Is that salt in a bottle? Why hadn't I heard of a pie funnel?

The animals thing is a kind of long, weird story. A few people complained quite bitterly about the inclusion of eating sounds (in a video about food, how unexpected!), so I started clipping them out. Many, many more people commented to mourn their absence, so I put them back in and showed footage of a farm animal eating; the footage happened to be monochrome. Now, it's become a sort of running joke, but I keep up the monochrome thing just to make it additionally strange.

I find that washing makes mushrooms slippery and unpleasant to handle. It's just not necessary

I noticed in both of your videos you scrape the mushrooms clean with a knife. Why can't you wash them under water?

An almost perfect recipe. I'd probably skip the mushroom, vegetables, brandy, seasoning, cream, pastry and substitute in a couple of slices of bread, some butter and several dollops of HP sauce. Otherwise, excellent!

So I know why they say you ought not to clean mushrooms with water, as it can absorb it and become wet. But what's the trouble with that? All it means is it'll take slightly longer to cook and evaporate the water off, and maybe make it harder if you're searing them. If it means not chucking or wasting dirtier sections, the extra minutes don't bother me.

I find it makes them unpleasant to handle and they do seem to cook differently to me. If they are that dirty that they would need washing, I just pass them over and don't pick.

I mean, you put egg in it, and male chicks are ground live after hatching or gassed because they're surplus to the egg industry, so technically some chickens were harmed during the making of this pie.

@@lilithstorm7026 I'm guessing it's because he's omnivorous. Vegetarianism and veganism will only work out for animals if every single person stops eating meat, because then you'd have no meat industry. That's not going to happen, ever. If less people eat meat, that's less money going into the meat industry which will inevitably lead to lower welfare standards for the animals. The best thing we can do for animals is to spend a little more on our meat, buying free range, responsibly reared meat. If we all did this, animal welfare standards in the meat industry would be higher than ever. Sometimes you just need to pull your head out of your arse and look at the bigger picture
