I have lemons in my frig and will make this dish tonight! I didn’t realize it but your professed love for chicken thighs has relieved me of much guilt! For years I have been making myself eat only chicken breast because they are “healthy”. No more! I love dark meat and thanks to watching your video, I learn you also enjoying them! This is definitely the best chicken and rice I’ve ever had. I marinated for about 5 hours and it was tender, juicy and the lemon, garlic and herb flavors were out of this world ! The rice was amazing too. My daughter was having a flare up with ulcerative colitis so I wanted to make something comforting and flavorful when she came for dinner. She loved it as I did and found it soothing and yummy. I love this recipe!

Hi Lisa, love your channel and thank you so much for helping me on my nascent cooking journey. One thing I wanted to say about the way you're prepping the garlic at 2:40, which I know is a very common way and you also do it in other videos. I used to do this method too until one time it landed me in the ER getting 8 stitches in my hand. What happened was as I slammed my hand down on the flat side of the knife, somehow this one time the knife slid sideways and put a big gash in my hand. Maybe that piece of garlic was oddly shaped, not sure. But anyway, now I just buy the organic peeled garlic and use my garlic press. I may be sacrificing a little freshness there, but I would like to stay out of the ER haha. I only mention all this bc I would hate to see anything happen to you similarly!! All the best

This is a great recipe. I think great for entertaining. You could leave in the oven on low untill ready to serve . All year dish, you could serve with salads in summer and some fancy veggies in winter. Even do two batches if alot of people. Can't wait to try this ... yum !

Since they cook similarly, I'd say you can probably try using quinoa. Just make sure to use less broth as you don't need as much to cook it. But, I haven't tried cooking this with quinoa yet!

My favorite way of handling quinoa (and buckwheat) lately is very similar to this recipe, but now when I think of it it looks like I'm more lazy than our beautiful host. Tricolor quinoa goes to the casserole, gets covered with water, some 1-2 bite-size pieces of salmon fillet carefully go on top, then seasoned and all that gets simmered on the stovetop for about 15 minutes. If quinoa absorbs too much water an extra water can be added mid-way to make overall quinoa-to-water ratio close to 1:2. The fish is steamed, staying moist on the inside and all the juices it loses are picked up by the quinoa. Of course, there is a bunch of variations, like if you want to mix in some onion, garlic, mushrooms, or veggies they all can be pre-fried first, left in the skillet and covered with quinoa before proceeding; water can be mixed with or replaced by broth etc. For the final touch it can be served with e.g. tartar sauce and dill flakes.

This looks amazing!! I would personally pair it with more veggies on the side, such as a simple steamed broccoli with a bit of fresh lemon juice and a sprinkle of grated Parmesan.

I've watched a few of your videos here and there since then but when I saw you prefer thighs and actually **leave the skin on** THAT'S when I subscribed.
