Chicken & Rice with Italian sausage. Best one pot meal. Easy and quick.

2 cups or long grain rice
4 cups of beef broth
2 TBS of Cajuns choice blackened seasoning (most of it was for the chicken) about 1 TSP over the onions/peppers.
1 TSP of Paprika
2 TBS minced garlic
1lb of boneless skinless chicken thighs
5 Italian sausage links cut into 1inch pieces
1/4 cup of sliced parmigiana cheese
1/4 cup chopped parsley
8 large cherry Tomatoes
1 onion
1 green bell pepper
2 celery stocks
Salt to taste ( the Cajun seasoning has salt, so I didn’t use much)
Oh yeah and some fresh cracked black pepper …. I think that’s it
Oh yeah some hot sauce
