I’ve never made gumbo before, so because I was nervous I watched a dozen or so videos on how to make it. Your video was by far the best because it made it seem simpler and less stressful. My gumbo turned out way better than i expected, and the flavors were incredible and unique. I can’t wait to cook this for my brother in law, he’s gonna cry. And the beauty of all this is no one in my household likes spicy stuff (I know, ridiculous) so I get it all to myself. Looking forward to leftovers today! Thanks AB!

For those that don't know; gumbo "file" is basically the dried snot of the okra. Its made from the leaves of the sassafras tree and is the exact same thing that give the okra it's slimy texture. if you want thicker gumbo without the snotty consistency you can use more flour, corn starch, or xanthan gum. Other than that, this recipe is Louisiana perfect!

I hate the privileged. It’s always one of you that inserts yourself or feel like you have to let people know or correct something. Have a seat and let this man do what he’s doing. Weren’t your people sitting down enjoying the food while ours cooked and served??? that is during and after slavery. That’ll save you a little excuse of “my family came after.” Nobody asked you what it was. You always have to insert yourself. Clearly he’s doing just fine and your insertion and suggestion is not needed. Create your own channel of unseasoned food.

The great thing about Louisiana we have pre made roux in jars in stores you can get it light or dark and you just season to taste. Less time consuming.

Learning to cook a roux takes some practice, I enjoyed your presentation. the darker you make a roux the less thickening power it has. I sometimes make my dark roux for the flavor and color and add some light roux for a little bit more thickening. don't get discouraged if you burn a roux, toss it and start over. I once got a great saying from a NOLA grandma, if you aint burned a roux, you aint ever made a roux.

Oh my goodness flavoring the oil with the sausage is such a good idea! Whenever I make gumbo I throw the sausage in after I get the gumbo simmering and wonder why I don't taste any sausage flavor. Seasoning the oil and adding some color to the sausage at the same time makes so much sense, thank you!

If you don't want to wear yourself out stirring the roux, you can spread the flour out on a baking sheet and cook it in the oven before hand. This helps the flour be further along once it goes in the pot and shorten the time it takes to darken up.

I brown my flour for about 35-45 minutes until dark brown (stirring every 5 minutes). You can cook everything else while your flour bakes. It’s a perfect cooking hack!

I live in Louisiana, and make gumbo quite frequently. I have to say, I’ve never seen anyone step away from making their roux to cut an onion or do any other step during that process. Down here we’re taught to constantly mix the roux as it changes to the desired color/consistency. I’ll have to give that a try next time..

This was a hit!! My husband is picky with food , but he went back for seconds!! I used bone in thighs, smoked beef sausage, and I added some boiled eggs. The rest was a little extra seasonings but mainly followed recipe.

Looks good. I make mine slightly different. I add thyme and garlic and onion powder w/my creole seasoning. I also bake my okra first to get rid of the slime then add it toward the end. And whenever possible I like to use fresh stock. Rarely happens lol but I try. I love the color you got on that gumbo!!!

This is what you do with leftover turkey. I make stock with the bones and giblets. I use the gelatin and butter from the bottom of the roasting pan - the gelatin goes in the stock and the butter goes in the roux. The only difference is I cut the vegetables smaller and cut the okra thinner.

Phenomenal recipe and instructions. I have wanted to try making Gumbo for years, but was intimidated by the threat of burning the roux. Thanks to AB I felt like I had a great understanding of the entire process of preparing a gumbo. I cook a gumbo the other day I like your method and veggie on cooking the gumbo that I will be trying I just had to add shrimp in. Thanks

Thanks, AB! Baaaby!!!!! I had Gumbo at Cheesecake Factory for my birthday and wanted it again. No one in my family cooked it that I could remember so I looked to you. I'm just adding shrimp and some diced tomatoes which I've seen in other tutorials. It was delicious without it too, so you don't have to y'all, and KEEP THAT ARM MOVING just like AB said and you'll do just fine! I thought I was going to have to add cream which the restaurant says they put in theirs but left well enough alone! I had to buy a badge to say thanks, you've blessed our home with several recipes. I was already comfy in the kitchen, but now I feel like I'm saying something now that I can make a whole roux and cook a good pot of Gumbo!!! I and my son are loving it! LOL AB I think I found you to help me get ready for my husband that's coming!!! I'm gonna have a lot of good things in my repertoire, big shout out to you!
