Chicken salad is so easy to prepare, and it goes with any occasion. You can serve it at game days gatherings, baby or bridal showers, picnics, any time you want it. This recipe is so easy. Ingredients:
3 medium chicken breasts, boiled and shredded
2-3 eggs, boiled, chopped
2 celery stalks, diced,
1/4 cup pecans, chopped finely
1 cup mayonnaise, or more if you like
options to add:
grapes, blueberries, strawberries, diced green onions or white onions
Directions,
Shred chicken breasts. Add chopped eggs, diced celery, and pecans. Stir in mayonnaise until combined. Serve as a sandwich or on a bed of lettuce. Also, stuffed tomatoes with chicken salad is delicious.

I like chicken salad made with boiled chicken, fried chicken and charcoal grilled chicken. I love mine with grapes, walnuts, apples, mayo and eggs.. it’s actually great with a shredded cheddar in it. I use croissant, add chicken , grapes, pecans, dried cranberries I also make my own dressing with mayonnaise, apple cider vinegar, sugar, dry mustard, salt and white pepper

This is a great idea for the broth to put in the mason jar. I have always divided it up into freezer bags and frozen them flat because it will spoil but I had never thought about putting it in a jar and the fat sealing it off like that. I am going to try that. Thank you.

You're looking well and healthy, Karen - happy to see it! I make my chicken salad pretty much the same way but I add a little finely chopped bell pepper along with the eggs, celery, green onions, seedless green grapes cut in half, and little red onion if I have it on hand For the dressing, I use 2 parts mayo to one part sour cream or plain yogurt, dill, salt, pepper and a dash of sugar. In the Fall, I like to use dried cranberries in place of the grapes. Stay well sweet lady, hugs to you! ❤

Hi Karen I just subscribed to your wonderful channel and I'm praying that they have found out what's going on with your heart? I just had a ablation of my heart and if your still having issues all I can say is get a oximeter it tells you how fast or slow your heart rate is going and what your oxygen level is ! Take photos and share that with ER Dr or your primary ! I been in and out of hospital and ERs just to say there was nothing wrong but there was my heart was going 250 + I would feel exhausted after a episode and it was hitting at night or any time of day but once I took picture showed ER DR they new it was VS tachycardia they fixed it and now my heart is at 70 80 range ❤! God bless that your health restores ! A new subscriber 😊

Yum! You made me so hungry for chicken salad! I make it very much like yours. I use grapes when I have it, but if I don’t, I have found that raisins make a great substitute. I soak them in boiling water for a few minutes before I add them to make them a bit juicier. Not the same as grapes, but a good alternative.

Good Afternoon, Miss Karen... Well, it is uncanny.... This is what I made for m y Dinner ( also known as Lunch ,lol.)... and then this came up on my feed.. I love Chix Salad , I can eat it over chopped Spinach / Spring Mix, with crackers . You're so right, it is such a versatile Dish ! However, I do not put Eggs in my Chix Salad, although I do add a tiny amount of finely chopped Shallot. I like using chopped Walnuts ,Cranberries, Celery ,and sometimes I add chopped Apple. I do use Dijon Mustard ( just a bit ) ,Mayonnaise, and also a tiny bit of Sour Cream, if I have it on hand. Looks soooo good ! 😊 And, a side note ( unrelated)... that colour looks great on you ! I hope you are doing much better today , you need to enjoy that nice Weather, and take your time having your lovely Lunch !

Try adding just mayo, ranch dressing (3/4 as much as the mayo) and chopped pecans to the shredded chicken. It makes a delicious chicken salad, especially on croissants. Another great chicken salad has some curry powder and chopped apples added (with mayo, celery & pecans).

Great tip on the celery, I’ll be trying that. I use 1/2 mayo and 1/2 sour cream and small amount of lemon juice in my chicken salad. I always enjoyed Cracker Barrel chicken salad and that’s what I heard they used. They’ve took it off the menu now. I love the Rada knives. Not only are the knives good but their other utensils are great. Hope you are doing better with your health. ❤

My chicken salad is pretty basic, chicken, green onion, celery, salt, pepper and mayonnaise. We also like to make a grilled chicken salad and cheese sandwich on sour dough, yum! My mother in law taught me the celery in cold water trick, I’ve used it many times. I only use Rada knifes, I get them at a local Amish store here in Central Michigan. I’ve gifted them to just about everyone I know, love them.

I don't put boiled eggs in my chicken salad bc the taste is too strong for the chicken . I do put eggs in my tuna salad for that very reason . I like pineapple and grapes & chopped celery , pecans in my chicken salad , no sour cream 😝..I use Duke's mayo . I season to taste with salt and pepper & put my chicken salad into a fresh tomato 🍅 ... it's delicious .

So good to see you looking healthy and pretty! I use pecans from Texas that are slightly sweet and spicy-not hot, I am like you-don’t care for super spicy! Also I dice up sweet pickles-I do this for chicken, tuna, pasta and potato salad. Not relish-my husband rule! 😘

I make 2 different chicken salads. First one I add chopped walnuts, pineapple tidbits, onion, thinly sliced celery and mayo. 2nd one I add diced onions, grated carrots, thinly sliced celery and mayo. It’s simple, but delicious….

The best chicken salad sandwich I’ve had in a restaurant is from Arby’s. It has delicious toasted honey wheat bread or sour dough I think, chicken, apples, red grapes, chopped pecans and mayo. I make mine like this but I add a little mustard, a little onion some celery, salt and a lot of pepper. You’re making me very hungry for chicken salad. No eggs. I’m funny about eggs. Loved them as a kid and don’t like them as an adult. None in my potato salad either.
