I tried 100 of recipes of sausages till yesterday with lots of spices in it but it never come out up to the mark and today i tried urs and they are fab exact taste like market my family and my kid loved it❤️Jazak Allah for the wonderful recipe brother

Hai Arshad to make Curing salt the proportion of table salt to pure sodium nitrite is 93.25 % to 6.75% , that means you add 6.75 gms sodium nitrite to 93.25 gms of table salt and you get 100 gms of mixture . Then you add 2 grams to 2.5 grams of this mixture to 1000 grams of meat or 1 kg meat beside other table salt that is required for the recipe. Leave this for at least 24 hours in refrigerator so that nitric oxide gas is released which gives peculiar/distinct taste to sausage. Correcting you because i like your recipes , keep up the good work.

Thanks for the video! Having watched your other videos, I guess that you and family have a powerful tradition in the correct and safe processing of meats from A to Z. (Like no other!) I prefer your choices of binders and spices the use of fat, chicken skin (Chinese secret for fried rice ) and sodium nitrate! Industry is not always wrong) When used correctly there's nothing to be worried about and it improves taste as it cooks better. Just my personal views. Blessings, for your sharing your best!

I used to make sausages in Britain commercially in 90's, only one spice mixture was used. This was a mixture of breadcrumbs, seasoning and pink colour. Casing was vegetarian for halal purpose. Used mincer for mixing and forming into sausages.
